Substitutions and Variations

Cinnamon Toast Crunch: Use any kind of cereal you want. Classic Rice Krispie treats fans might like to use Rice Krispies or you could try Chex cereal, Corn Flakes, Cocoa Puffs, or Golden Grahams. Alternatively, mix and match two or more types of your favorite cereal together.
Mini marshmallows: Use any color. You can swap in some marshmallow fluff, although it’s softer than marshmallows so using only marshmallow fluff will result in bars that are too soft to hold together.
Butter: Margarine would also work. Don’t sub coconut oil, as these bars are kept at room temperature and coconut oil won’t hold the bars together properly.
More add-ins: Include anything else you like in the cereal mixture, such as vanilla extract, chocolate chips or butterscotch chips. Melted white chocolate would be good with the gooey marshmallows too.

How to Store Cinnamon Toast Crunch Marshmallow Treats

Store: Keep leftovers covered with plastic wrap or in an airtight container at room temperature and eat within 3 days. You can separate the layers with parchment paper if you’re concerned about them sticking together.
Freeze: Don’t freeze these (or refrigerate them) as they’ll go rubbery or soggy.

Top Tips

Don’t skip the greasing: Spraying your baking dish with nonstick spray ensures the bars don’t stick and break apart when you try to remove them.
Work quickly: As soon as you take the melted marshmallow mixture out of the microwave, it starts to set, so work fast when pressing the mixture into your prepared pan.
No extra-large mixing bowl? Just make half the recipe and let the bars set, then make the other half and layer on top of a sheet of parchment paper on top of the first batch.

Cinnamon Toast Crunch Bars Recipe FAQs

Can I make these thinner?

Sure, just halve the ingredient amounts and use the same size baking dish and they’ll come out thinner.

Why does the marshmallow mixture stick to my hands when trying to press it into the pan?

It’s a very sticky mixture. I like to spray one of my hands with nonstick spray to make this step quicker and easier.

Can I make these without a microwave?

I haven’t tried this but you could use a large pot over a medium low heat and stir the mixture all the time until it melts.
