Air Fryer Apricot Apple Dumplings

These golden, flaky dumplings are filled with cinnamon-kissed apples and sweet apricots, all coated in warm caramel sauce. The air fryer crisps the pastry while keeping the filling soft.

Instructions 

  • Preheat the air fryer to 325°F.
  • Lightly flour a wooden cutting board. Unroll pastry dough sheets. Cut each sheet into 4 equal sections. Roll each section into a ball, then place back onto the cutting board.
  • One by one use a rolling pin to roll out the dough into a thin flat circle about 6 inches in diameter.  
  • Peel and core the apples. Cut into small pieces. Repeat with apricots. 
  • Heat a small saucepan over medium heat. Add butter, almond paste, and brown sugar to the pan. Break apart the almond paste as the butter melts and whisk to combine. Cook for 2 minutes, then add a teaspoon of cinnamon and the caramel sauce. Whisk until smooth and cook for 1 minute.
  • Add apples and apricots to a large mixing bowl. Stir in the buttered caramel until thoroughly coated.  
  • Place a scoop of apple mixture into the center of each dough round. Fold the pastry up and over the center to cover. Pinch seams to seal.  
  • Arrange dumplings in a single layer in the air fryer basket. Spray lightly with non-stick cooking spray and sprinkle with cinnamon. Cook for 22 minutes.  
  • Allow to cool for 5 minutes before serving.
