How to Make Lemon Cream Sauce for Pasta

Cook pasta: Follow the package directions to cook the pasta and drain it, saving some of the pasta water.
Sauté the garlic: Melt the butter with the olive oil in a skillet and sauté the garlic in there for a minute.
Add more sauce ingredients: Next, add fresh lemon juice and zest, heavy cream, red pepper flakes, reserved pasta cooking liquid, and salt and freshly ground black pepper, and cook over a very gentle simmer for 5 minutes or so.
Add the cheese and pasta: Stir the parmesan cheese and cooked spaghetti into the lemon sauce.
The finishing touches: Serve immediately, garnished with more lemon zest, red pepper flakes, grated parmesan, and chopped fresh parsley.

Substitutions and Variations

Gluten-free option: Choose gluten-free spaghetti if you need to make this gluten-free (this one is my fave!)
Tweak the seasonings: You can omit the red pepper flakes if you don’t want the spicy kick, or adjust the amount of salt and black pepper.
Change up the pasta: Spaghetti is a classic choice but there are plenty more types of pasta to choose from, and they all work great with this creamy lemon sauce. You can use fresh pasta if you want (bear in mind it has a shorter cooking time than dried pasta).

How to Store Leftover Pasta al Limone

Store: Keep leftovers in an airtight container in the fridge and use within 4 days.
Freeze: This will freeze but the lemon cream sauce might separate and thaw out a bit grainy.
Thaw: Thaw in the refrigerator overnight.
Reheat: Add more cream, lemon juice and butter to thin the sauce out a bit while rewarming it in a pan on the stove or in the microwave.

Zest then juice: It’s easier to zest the lemons before you juice them. Also, you can start with less lemon juice and lemon zest if you don’t want a strong lemon flavor, adding more to taste.

Although this recipe is best made and served straight away, and only takes about half an hour from start to finish, you can prep some of the ingredients ahead, such as grating the cheese or zesting and juicing your lemon.

Is this a main dish or a side dish?

I like to serve this with steak, pork, chicken, or another protein because it makes a good side dish. I also serve veggies on the side, perhaps smoked asparagus or roasted Brussels sprouts. But it can also work as a vegetarian main dish in its own right.

Ingredients 

  • 12 Ounces spaghetti
  • 4 Tablespoons butter
  • 1 Tablespoon olive oil
  • 2 Cloves garlic, minced
  • 1 Cup heavy whipping cream
  • zest from 1 lemon, plus more for garnish
  • juice from 1 lemon
  • ¼ Teaspoon red pepper flakes, plus more for garnish
  • ½ Teaspoon kosher salt, plus more to taste
  • ½ Teaspoon black pepper, freshly ground, plus more to taste
  • ½ Cup reserved pasta water
  • ½ Cup parmesan cheese, grated, plus more for garnish
  • fresh parsley, chopped, for garnish

Instructions 

  • Boil water in a large pot over high heat and then cook the spaghetti according to the package directions.
  • Drain the pasta and save 1 cup of the starchy pasta water.
  • Melt the butter and olive oil in a large skillet over a medium heat.
  • Add the garlic and sauté for 1 minute, or until fragrant.
  • Whisk in the heavy cream, lemon zest, lemon juice, red pepper flakes, salt, pepper, and pasta water.
  • Cook for 5 to 7 minutes, or until the sauce has thickened.
  • Add the parmesan cheese and stir to combine.
  • Toss the cooked pasta in the lemon sauce.
  • Garnish with red pepper flakes, lemon zest, parmesan cheese, and parsley.
  • Serve immediately.
