- 1 3/4 Cup vegetable broth
- ½ Tablespoon canola oil
- 2 eggs
- 1 Cup carrots, shoestring
- 1 Cup sugar snap peas
- 2 Cups Broccoli florets
- ½ Cup bean sprouts
- 2 Stalks green onion
Vegetarian Dark Sauce
- ¾ Cup soy sauce, low sodium
- ½ Tablespoon sesame oil
- 2 Teaspoon mirin
- 2 Teaspoon hot chili oil
- 2 Teaspoon ginger, minced
- 2 Teaspoon garlic, minced
- 2 Tablespoon brown sugar
- Pinch white pepper
Instructions
- Add vegetable broth to a saucepan over medium high heat and bring to a boil.
- Add the rice, then lower heat to a simmer. Cook for 15 minutes.

- Once the rice is finished cooking, remove from heat and fluff with a fork.
