For bone-in chicken thighs, you might need to extend the cooking time in the oven, but note that this could result in the farro becoming overcooked.
Pearled farro: Pearled farro is farro, a grain, with the outer bran layer removed so it cooks fast.
Za’atar: This Middle Eastern spice blend is widely available. Trader Joe’s za’atar is a favorite.
Garlic: Fresh is best.
Lemon juice and zest: For a lovely zingy flavor profile. The lemon zest and juice brighten the dish and balance the earthy za’atar and nutty farro. Use fresh lemon for the best results.

How to Make a Za’atar Crusted Chicken Skillet

Toast the farro: Toast the farro in a dry skillet until fragrant and then rinse and set aside.
Sear the chicken thighs: Season the chicken with paprika, kosher salt and freshly ground black pepper, and sear in olive oil in a large skillet. Remove the chicken to a plate.
Add more ingredients: Add the shallots to the same pan and then the garlic. Add the broth and then the farro and lemon zest to the skillet. Add the chicken back to the skillet. Whisk za’atar seasoning with olive oil and spread this za’atar sauce over the chicken thighs.
Roast the za’atar chicken: Roast the chicken thighs in the oven. Add the farro and roast until the chicken is cooked through.
The finishing touches: Squeeze lemon juice over the chicken thighs and drizzle over some olive oil. Serve warm, garnished with fresh parsley and/or pine nuts if liked.

Substitutions and Variations

Gluten-free option: If you want a gluten-free version, you can’t use farro as it’s a type of wheat and therefore has gluten. You could try rice instead, cooking it separately and then serving the chicken thigh mixture on top. Or boiled Yukon Gold potatoes with roasted veggies on the side would work.
Za’atar: If you can’t find za’atar at grocery store nearby, you can order this ingredient online (I used this one!)
Garlic: Feel free to add extra garlic.
Olive oil: Use another type of oil if preferred.
Paprika: Sweet paprika and smoked paprika both work, so use whichever you have.
Shallot: You can substitute yellow onion.
No cast iron skillet? Use a regular skillet and transfer the chicken thighs mixture on to a sheet pan instead.

Za’atar Crusted Chicken with Farro

This amazing za’atar crusted chicken with farro makes a wonderful weeknight dinner. The Middle Eastern flavors are so bold and rich.

Ingredients 

  • 1 Cup farro, pearled
  • 2 Pounds boneless skinless chicken thighs, about 5 chicken thighs
  • 4 Teaspoons za'atar
  • 1 Teaspoon paprika
  • 1 Teaspoon sea salt
  • ½ Teaspoon black pepper
  • 3 Tablespoons olive oil
  • 1 shallot, large, sliced
  • 2 Cloves garlic, minced
  • 2 ½ Cups chicken broth
  • zest and juice of 1 lemon, about 2 or 3 Tablespoons juice

Optional Garnishes:

Instructions 

  • Preheat the oven to 350°F.
  • Place farro in a dry skillet over medium heat. Toast, stirring often, until fragrant, 4 or 5 minutes.
  • Transfer to a colander, rinse and set aside.
  • In a small bowl, whisk together 2 tablespoons of za’atar with 2 tablespoons of olive oil. Set aside.
  • Season the chicken with paprika, salt and pepper.
  • Heat 1 tablespoon olive oil in a large, oven-safe skillet over medium heat.
  • Sear the chicken thighs for 4 to 5 minutes per side until browned. Transfer to a plate.
  • In the same skillet, add the shallots and sauté for 2 or 3 minutes until softened. Add the garlic and cook for 30 seconds more.
  • Add a splash of broth to deglaze the pan, scraping up any browned bits.
  • Stir in the rinsed farro along with the lemon zest and remaining broth.
  • Bring the mixture to a simmer, then reduce heat to low.
  • Nestle the chicken into the skillet. Spread the prepared zaatar-oil mixture the top of each piece of chicken.
  • Transfer to the oven and roast, uncovered, for 15 minutes.
  • Stir in the farro and return to the oven.
  • Bake for another 10 to 15 minutes, until the farro is tender and the chicken reaches 165°F in the thickest part.
  • Remove the skillet from the oven, squeeze lemon juice over the dish, and drizzle with olive oil.
  • Garnish with pine nuts and parsley if liked and serve immediately.
