With school, work, volunteering and all the other things I have happening it is often difficult to find time to actually cook a meal to eat. Most of my friends and classmates have the same trouble.
Maybe it is because I am half Italian, but I use pasta as my easy cook go-to meal. ❤ It is totally my comfort food and I love that pasta can take so many forms and flavours.
This one pot pasta cooks in ten minutes, without having to boil or drain water. It uses the new Barilla Pronto Pasta. I know it sounds crazy, but it really works. 🙂 Barilla is an Italian pasta company and I have been eating their pasta since I was young. Barilla was founded in Parma, Italy and that happens to be where my dad was born.
My recipe is vegetarian and does not have any protein, but if you want you could add some. Chicken would be a great addition.
This is a one pot pasta meal, which means not only is it going to be quick to make but it will also be quick to clean up. How perfect is that? This recipe takes less than 20 minutes from start to finish to cook, so there is no excuse to order take-out. This will be faster and so much better!

For this one pot pasta, you first cook the vegetables and remove them from the pan and then cook the Barilla Pronto Penne Pasta in that same pan. No need to wash the pan in between! Once the pasta is cooked, you can place it on your plate and then top with the cooked vegetables. However, if you are like my brother, you will probably just eat right out of the pan you cooked it in. That is okay, too, I guess.
- 1 Cup cherry tomatoes, cut in half
- 1 Cup green beans, cut into 1 inch pieces
- 1/4 Cup walnut pieces
- 3 Cloves garlic, finely chopped
- 1 Tbsp olive oil
- 1 Cup spinach
- 1/2 Cup kale
- 1 Box of Barilla Pronto Penne Pasta
- 1/4 Cup of Barilla Pesto Sauce
- Parmesan cheese
- In a medium sized pan, combine the cherry tomatoes, green beans, walnuts, olive oil and garlic. Cook over medium heat until soft.
- Remove from pan and set aside.
- In same pan, cook Barilla Pronto Penne Pasta as per instructions.
- When pasta is cooked add Barilla Pesto Sauce, spinach and kale. Cook over medium heat until greens wilt.
- Place cooked pasta on a plate for serving and top with cooked tomato and bean mixture.
- Add Parmesan cheese to taste.
I found the Barilla Pronto Pasta at my local Walmart store. It comes in several varieties, including Spaghetti, Penne, Rotini, and Elbow. It is in a blue box like the regular Barilla pasta, but it has “Pronto” written on the box. The Barilla Pesto Sauce is in a smaller jar and it was on the top shelf at my store, which is terribly hard to reach for short girls. 🙂 The struggle…
