I don’t know about you, but I have been in the kitchen a lot more trying new and yummy recipes! And since everything is pretty much shut down, you kind of have to make things at home. This gluten free meatballs and polenta recipe I want to share with you is such an awesome, comfort food kind of dish. You will feel full, but the best part is – this is actually low-cal and good for you! Here is how to make my homemade gluten free meatballs and polenta.
Living in these crazy times is just that – crazy. But luckily, it has brought such amazing new ways to have us tap into a more creative side of our brains. Plus, I love recreating recipes that I have eaten since I was little. Polenta is an all-time favourite. My nonna used to make something very similar to this gluten free meatballs and polenta recipe.
Gluten Free Meatballs
Meatballs are one of my favourites. Don’t you just feel like you are visiting some cool Italian restaurant when you have some superb meatballs? They are hearty and obviously filled with tons of protein. What I put in mine actually makes them super healthy and even a great leftover snack. Plus, when you cook them in the tomato sauce, they stay super moist. You can obviously use any type of ground meat or meat substitute that you prefer. I have found the most luck (and flavor!) from using beef. Make sure the meat is ground and on the lean side.
These gluten free meatballs are made with gluten free bread crumbs. If you don’t want gluten free, it is okay to use regular bread crumbs.
Nothing gets my mouth watering quite like the delicious, creamy and cheesy taste of freshly made polenta. If you have never had polenta before, let me explain exactly what this magnificent dish is. It usually is a side dish for hearty meals – it is the definition of comfort food. It is pretty much a boiled down cornmeal, think of grits but smoother and richer in flavor. If you have had it before, you know you can really make any polenta recipe your own with your favorite herbs and spices. But let’s be real – even a simple polenta can be more satisfying than adding a bunch of stuff to it.
If you didn’t know polenta is gluten free and its super yummy, I used gluten free bread crumbs in the meatballs so that I was able to eat them. This meal is perfect for dinner and great for any celiac who wants tasty gluten free meatballs and polenta!
Gluten Free Meatballs & Polenta Recipe
Gluten Free Meatballs & Polenta
- ¾ Cup breadcrumbs gluten free
- 1 egg
- ½ Cup Parmesan cheese grated
- ¼ Cup parsley chapped
- 3 Clove garlic grated
- ½ Teaspoon Italian seasoning
- ½ Teaspoon onion powder
- 1 Pound ground beef
- 1 Tablespoon olive oil
- 3 Cloves garlic minced
- ½ Cup onions chopped
- 10 Cherry tomatoes diced
- 1/2 Teaspoon salt
- 1/4 Teaspoon black pepper ground
- ¼ Cup water
- 6 Cups beef broth
- 1 Cup polenta ground cornmeal
- ½ Cup Parmesan cheese grated
- 1 Tablespoon butter unsalted
- Parsley chopped
- 1 Pinch paprika
- Parmesan cheese grated
- In a medium bowl, combine all the ingredients except the ground beef.
- Add the ground beef and mix until combined.
- Roll into meatballs about 1″ in diameter.
- Place meatballs with the tomato sauce.
- Heat oil in a saucepan over medium heat.
- Add the onions and the garlic and stir to cook until soft and fragrant.
- Add the tomato, water, salt and pepper.
- Allow the tomato sauce to come to a simmer, add the meatballs and cover with sauce.
- Cover with a lid and reduce heat to low.
- Allow to simmer for 10 to 12 minutes or until the meatballs cook all the way through.
- While the sauce and meatballs are cooking, heat the broth in a large pot until boiling.
- Reduce the heat to medium low. Continuously whisk as you slowly add in the polenta.
- Cover pot and let cook on low for 20 to 25 minutes, stirring every 5 minutes.
- When the polenta is done, turn the heat off and stir in the Parmesan cheese and butter.
- If the polenta is too thick, you may awant to add additional broth.
- Put the polenta into a serving dish, top with meatballs and tomato sauce.
- Garnish if desired.
