If you’re buying ground meat from the grocery store, choose the meat which looks most pink or red. Also, I would recommend 75/25 beef, which is 75% lean and 25% fat. You could use 80/20 or even 90/10 but the less fat percentage you have, the drier your meat balls will be. A little fat can be a good thing!

There is never any need to over-mix meatballs, and a little texture in there is fine. Handling them too much can cause the heat from your hands to melt the fat in the meat. This makes them sticky and more prone to falling apart, which you don’t want!

One Pot Pasta with Mediterranean Meatballs

Ingredients 

  • 1 1/2 Cup ground beef
  • 1 onion
  • 3 garlic cloves
  • 1 egg
  • 1 Cup cherry tomatoes, halved
  • 3 Tbsp. tomato puree
  • 1/2 Cup olives, Castelvetrano
  • 1/2 Cup parsley, fresh and chopped
  • 2 Tbsp. olive oil
  • 3 Tbsp. Parmesan
  • 200 g spaghetti
  • 3 1/2 Cup water
  • 1 Tsp. granulated sugar
  • 2 Tsp. oregano, dried

Instructions 

  • Place the beef, one half of a chopped onion, 2 crushed garlic cloves, an egg, and a pinch of salt and freshly ground black pepper into a large bowl. Mix everything together. Then, form the mixture into meatballs.
  • Pour 3 tablespoons of olive oil onto a skillet and heat it. Then, place the meatballs in one layer and cook one side for 3 minutes. Flip them and cook for 3 more minutes.
  • Add the second half of the chopped onion and a crushed garlic clove. Cook for about 2-4 minutes. Then, add tomato puree,oregano, sugar, cherry tomatoes, and ½ cup of water. Stir it all well and bring it to the boil. Cook for about 3 minutes.
  • Add the rest of the water, bring it to the boil and add spaghetti. Add salt to taste.
  • Cook spaghetti under the lid for about 10 to 14 minutes (see the instructions on the package).
  • When spaghetti is ready, add the olives,chopped parsley and parmesan. Serve immediately.
