Substitutions and Variations

Vegetables: You can use other kinds of vegetables in this if you want, such as red bell pepper or green bell pepper, thinly sliced mushrooms, snap peas, red cabbage, or even some crushed pineapple chunks if you drain them well first.
Dressing: Substitute bottled Thai peanut dressing for the homemade dressing or add other components to the dressing such as seasoned rice vinegar (in place of the mirin) or apple cider vinegar, red pepper flakes, extra sesame oil, toasted sesame seeds, or chili garlic sauce.
Soy sauce: You can use coconut aminos instead.
Sweeten up the dressing: If you want a sweet touch, honey, agave syrup, sugar, or artificial sweetener would work.

Top Tips

Invest in a good spiralizer: This makes all the difference! And you’ll find yourself using it all the time. This is mine!
Switch up the dressing: Zucchini noodles go with pretty much anything, and, if you swap the Chinese-inspired dressing for any other dressing, you’ll find it does go with anything!
Dress just before serving: Don’t add the dressing too soon, as dressed veggies go soggy over time.

What exactly is mirin?

If you’re unfamiliar with this ingredient, you might want to know more about what it is exactly and why it has a place in your zucchini noodles salad.

Mirin is popular in Chinese recipes and is a type of rice wine. It contrasts nicely with the sesame oil, lime juice, and other dressing ingredients. It’s alcoholic, so sub a different vinegar and omit the mirin if you prefer.
