Eggs: I used large eggs. It doesn’t matter much which size of egg you use although if you only have small ones you might want to reduce the amount of filling ingredients slightly.
Pickled jalapenos: These add a touch of heat without making the deviled eggs too spicy.
Dijon mustard: Adds a tasty tang to the yolk mixture.
Mayonnaise: Makes the filling rich and creamy. I used full-fat mayonnaise for mine.
Cajun seasoning: Adds plenty of Southern flavor and a little heat.
Panko breadcrumbs: For a crispy coating.
Oil: For frying the egg whites. You can use anything you like – canola oil, peanut oil or vegetable oil perhaps.

How to Make Crispy Deviled Eggs

Boil and prepare the eggs: Hard boil your eggs and slice each one in half lengthwise. Put the egg yolks in a medium bowl and put the egg white halves on a serving platter.
Make the filling: Mash pickled jalapenos (and some of the juice), mustard, mayonnaise, kosher salt, black pepper, and Cajun seasoning with the egg yolks until smooth and creamy.
Set up a breading station: Put the flour in one shallow bowl, the flour in a second bowl and the panko breadcrumbs mixed with salt and Cajun seasoning in a third bowl.
Coat and fry the egg whites: Dip each egg white half in flour and then in beaten egg and finally in the seasoned breadcrumb mixture. Fry in hot oil in a heavy bottomed pot or large Dutch oven until golden brown and crispy, in batches if needed.
Drain off excess oil and cool slightly: Use a slotted spoon to remove the eggs to a paper towel lined plate to drain off excess grease. Let them to cool slightly.
Fill the egg whites: Pipe some egg yolk mixture into each egg white half with a piping bag or spoon it in.
Garnish and serve: Garnish with Cajun seasoning, chopped chives and/or jalapeno slices, if liked, and serve.

Fried Deviled Eggs

Ingredients 

For Garnish:

Instructions 

  • Slice each hard-boiled egg in half lengthwise.
  • Remove the yolks and add them in a medium bowl.
  • Set the egg whites aside on a plate or serving platter.

Make the Filling:

  • Add pickled jalapenos and juice, Dijon, mayonnaise, ½ teaspoon salt, ½ teaspoon Cajun seasoning, and black pepper to the same bowl with the yolks.
  • Mix thoroughly until smooth and creamy. Set aside.

Coat the Egg Whites:

  • Prepare a breading station with 3 shallow bowls for dredging: one for flour, one with the beaten egg, and the third with panko breadcrumbs.
