Beef Stroganoff with Ground Beef Ingredients
A complete list of ingredients and amounts can be found in the recipe card below.
Egg noodles: I like to use wide egg noodles (thick egg noodles).
Ground beef: 85/15 works well or you could use 90/10 if you prefer very lean ground beef.
Condensed cream of mushroom soup: Adds a nice mushroom flavor and a creamy texture.
Baby bella mushrooms: These add nutrients and an earthy flavor.
Garlic cloves: Add extra if you like!
Sour cream: To make it extra-creamy and add a tasty, savory tang.
Worcestershire sauce: Adds a nice savory or umami flavor. You can omit this ingredient if you aren’t a fan, or sub soy sauce which also offers a salty, savory taste.
All-purpose flour: Thickens the sauce.

Cook the egg noodles: Cook them to al dente, drain and set aside.
Cook the ground meat: Cook over a medium heat until browned through and set aside with the noodles.
Make the sauce: Melt butter in the same skillet and add sliced mushrooms and onions. Add the minced garlic and mix in the flour. Add the beef broth and mushroom soup and cook the cream sauce until thick.
The finishing touches: Stir in the sour cream, Worcestershire sauce and season with salt and pepper, then add the cooked noodles and beef mixture back in. Serve immediately, garnished with fresh parsley.
Substitutions and Variations
Gluten-free version: Use your favorite gluten-free noodles (try these ones) and check the mushroom soup ingredients (this one is a favorite). Swap the flour for arrowroot or a similar gluten-free thickener.
Another kind of meat: Try hamburger meat, ground pork or even ground turkey or chicken. You can add a bouillon cube or extra seasonings if using very lean meat, to add more flavor.
No mushroom soup? Use heavy cream instead, or try cream of celery soup.
Sour cream sub: Swap the sour cream for plain Greek yogurt.
Reduced calorie option: Use low fat Greek yogurt for the sour cream or omit it altogether
Another kind of noodles: Cavatappi, penne, macaroni, or farfalle can take the place of egg noodles.
Different vegetables: Swap the sweet onion for yellow onion, the baby bella mushrooms for cremini mushrooms or another variety, or add some other veggies such as diced zucchini, asparagus or bell peppers.
Serving Suggestions
Appetizers: Start the meal with fresh cabbage soup or baked feta soup.
Side dishes: Enjoy onion rings or green goddess salad with your ground beef stroganoff.
Dessert: These vanilla muffins would be delicious, or maybe one of these old-fashioned Swiss roll recipes.
How to Store Hamburger Stroganoff
Store: Keep leftover beef stroganoff in a covered container in the refrigerator for up to 4 days.
Freeze: When you make ground beef stroganoff, why not make a double batch? This dish freezes well. Freeze it in an airtight container for up to 3 months.
Thaw: Defrost overnight in the fridge.
Reheat: Warm it back up in a pan on the stove or microwave it.
Top Tips
Sauce thickness: If the sauce gets too thick or evaporates too much, just stir in some more broth.
Take it off the heat: Ensure you remove the pan from the heat before stirring in the sour cream, otherwise it can curdle and separate.
Season to taste: Taste the ground beef stroganoff recipe after stirring in the sour cream, add salt and pepper, and taste again so you can add more if needed.
Hamburger Stroganoff FAQs
Stroganoff sauce is a flour-thickened beef-based broth. It’s typically served with beef and mushrooms and noodles, mashed potatoes or even crusty bread. It is a Russian recipe named after Count Alexander Grigorievich Stroganoff who lived in Odessa, Russia, in the late 1800s.
Spanish paprika is tasty in beef stroganoff recipes, and so is Dijon mustard. If you want to add one of those, go ahead.
Yes you can, and that’s the more traditional way to make it. The ground beef version is just as tasty (and more affordable) but you can use sliced steak if you prefer. Cook it to your preferred doneness, then reserve with the egg noodles and stir it back in at the end.
