How to Make Nutella Mousse Cups

Prepare the creme anglaise: Whisk the egg yolk and sugar in a bowl until smooth. Bring the cream to the boil and turn down the heat. Pour the hot cream over the egg mixture slowly. Whisk as you go. Strain back into the pan and cook gently until ready.
Make the Nutella mousse: Pour the warm creme anglaise over strained Nutella and whisk until combined. Cool and beat until fluffy. Fold the whipped cream in two stages (the cream must be beaten until stiff peaks form).
Prepare the base: Crush Oreo cookies. Mix crumbs with melted butter. Press the mixture into the bottom of cups or glasses.
Assemble: Spoon the mousse over the cookie base in cups. Cover with plastic wrap and chill in the fridge. Decorate with melted chocolate, chocolate shavings, fruit, and extra whipping cream.

Nutella Mousse Cups

Ingredients 

For the Creme Anglaise:

  • 1 egg yolk
  • 1 Teaspoon white sugar
  • Ounces heavy cream

For the Nutella Mousse:

  • Ounces Nutella
  • 6 Ounces heavy cream

For the Cookie Base:

Optional Garnishes:

  • Ounces whipping cream
  • 1 Ounce hazelnuts
  • strawberries, fresh
  • chocolate, shaved

Instructions 

Make the Creme Anglaise:

  • In a bowl, whisk the egg yolk and sugar together.
  • Heat the cream in a saucepan until it boils.
  • Pour the hot cream over the egg mixture while whisking continuously.
  • Strain the mixture back into the saucepan and cook over low heat until it reaches 180°F.
  • Don’t let it boil. If you don't have a thermometer, cook until it forms a thin white foam or coats the back of a spoon.

Make the Nutella Mousse:

  • Pour the warm creme anglaise over the Nutella.
  • Mix with a whisk.
  • Let it cool to room temperature.
  • Place the mixture in a bowl and beat with an electric mixer until fluffy.
  • Fold a bit of the whipped cream into the Nutella mixture, then fold in the rest.

For the Crust:

  • Crush the Oreo cookies into fine crumbs with a food processor.
  • Melt the butter and mix it with the cookie crumbs.
  • Press the mixture into the bottom of cups or glasses to form the crust.
  • Divide the mousse between 4 serving glasses.
  • Cover with plastic wrap and refrigerate for at least 6 hours.
