Substitutions and Variations

Feta cheese: Goat cheese is another soft, tangy option. Other cheeses which would work are halloumi, cotija, queso fresca, or panela, each of which has a salty taste and firm texture like feta. Mini mozzarella balls work if you prefer the creamy, neutral flavor of those over the crumbly texture and sour tang of feta.
Add red onion: Thin slices bring a sharp bite and extra color.
Try basil instead of mint: For a different herbaceous twist.
Lemon: You could substitute lime instead.
Make it spicy: Add a sprinkle of chili flakes or sliced jalapeños.
Honey: Use maple syrup or agave syrup in place of the honey.
