Prepare the cake batter: Cream the butter with the brown sugar in one bowl, put the dry ingredients in another bowl and the wet ones in a third bowl. Mix the dry ingredients with the brown sugar mixture and then you can add the wet ingredients gradually.
Bake the coffee cake: Pour the batter into a greased loaf pan. Cover with foil and bake in a preheated air fryer until done. Cool for 5 minutes before inverting onto a cake platter.

Store: Leftover cake can be stored for a day or 2 at room temperature in an airtight container or in plastic wrap. You can also keep the cake refrigerated for up to 3 more days.
Freeze: I suggest that you freeze the cake in individual pieces so you can thaw them out later whenever you want a sweet treat. It will keep for a couple of months in the freezer in an airtight container. You will find that freezing doesn’t seem to impact the flavor or texture of this cake.
Thaw:
 Defrost the cake in the refrigerator overnight or at room temperate for a few hours.

Where does the name come from?

A coffee cake doesn’t necessarily contain coffee but is good served with a mug of it. As for Watergate cake (very similar to this recipe) I’ve read that the name comes from the Watergate scandal of the time, as the cake is full of nuts and has a cover-up glaze. Back in the 1970s there were a lot of recipes satirically named like this!

Air Fryer Pistachio Coffee Cake

This air fryer pistachio coffee cake features almonds, coconut and pistachio. It's sweet, moist and easy to bake in the air fryer.

Ingredients 

For the Cake:

Instructions 

  • Preheat air fryer to 350 degrees F for 5 minutes.  

Make the Cake Batter:

  • Cream the butter and brown sugar in a stand mixer.  
  • Combine the flour, coconut flour, coconut flakes, baking powder and baking soda, and pudding mix in one bowl and the egg, almond extract and milk in another.  
  • Add the dry ingredients to the mixing bowl with the brown sugar and butter, then mix on low speed until well combined. Slowly add in the wet ingredients and continue mixing until smooth.  

Air Fry the Cake:

  • Lightly spray a loaf pan with nonstick cooking spray. Pour batter into the loaf pan. Cover with foil. 
  • Place into the air fryer and bake for 25 minutes, remove foil and cook for 5 more minutes. Check to be sure the cake is done by inserting a toothpick into the center. If it comes out clean, it's ready.  

Prepare and Add the Toppings:

  • While the cake is cooking, prepare the glaze. Combine all the glaze ingredients in a medium mixing bowl and beat on high speed until smooth. 
  • Allow loaf to cool for 10 minutes. Remove from pan and spread glaze over the top. Sprinkle with pistachios and slivered almonds.

    Just incredible. I discovered pistachios somewhat late in life but this recipe…. it showcases them so beautifully
