A Few Tips and Tricks

Because these are cooked in an air fryer and not a muffin pan, you will need to make sure the stacks hold together. The easiest way is to use cupcake liners, either paper or silicone ones. Once the air fryer sweet potatoes are cooked through, the melted cheese will hold them together so you can simply discard the liners before serving.

Don’t make these ahead because the salt will start to pull moisture out of the potato. Also, if you cut sweet potatoes too far ahead, they will start to go brown. They’ll taste the same but it’s best to prepare this recipe just before cooking it. Air Fryer Sweet Potato Casserole Stacks

Air fryer sweet potato casserole stacks made a delicious side dish. This sliced yam casserole is a breeze to prepare. The sweet potato stacks are topped with a crunchy topping. The thin sliced sweet potatoes are so quick to prepare in the air fryer, too.

Ingredients 

  • 6 sweet potatoes, thinly sliced
  • 1/4 Cup olive oil, extra virgin
  • 2 Cloves garlic , minced
  • 1 Teaspoon salt , kosher flakes
  • 1/2 Teaspoon black pepper
  • 1/2 Cup mozzarella , shredded
  • 1/4 Cup unsalted butter 
  • 1/2 Cup panko bread crumbs
  • 1/4 Cup parmesan , grated
  • 1 Tablespoon basil, chopped

Instructions 

  • Preheat the air fryer to 340 degrees F. 
  • Thinly slice sweet potatoes and add to a large mixing bowl. In a separate small bowl, mix olive oil, minced garlic, salt, and pepper. Combine with the sweet potatoes and stir to coat. 
  • Use foil muffin tins, or small pieces of foil to hold the potato stacks in place. Spray each tin lightly with non-stick cooking spray. Arrange sweet potato slices in a stack with a pinch of mozzarella cheese between each slice until the tin is almost filled, or about 2” high. 
  • Combine panko, parmesan, and basil in a bowl. Pour in melted butter and stir. Top each sweet potato stack with a spoonful of breadcrumb mixture.
  • Place into the air fryer and cook for 30 minutes. 
  • Let cool slightly before serving. Top with sour cream if desired.
