Air Fryer Casserole Potatoes Ingredients
You will need sweet potatoes of course, as the main ingredient. Then you will need oil, garlic, salt and pepper to flavour the potato slices. Mozzarella cheese goes in between the potato slices. This not only adds another flavour to the thin sliced sweet potato, but also helps the sweet potato stacks hold together.
The panko breadcrumb, basil and parmesan topping is the icing on the cake! I expect you already have most of these ingredients to hand.
How to Make Air Fryer Sliced Sweet Potatoes
Once you have all the ingredients you can get started on making air fryer sweet potato casserole stacks. Cut the potatoes thinly. This speeds up the cooking time and also gives the sliced yam casserole more ‘layers’ that you can add cheese in between. Toss the potato slices with the oil and garlic and grind in some seasoning.
Next you can stack layers of the seasoned sweet potato and the mozzarella. Finally mix the remaining ingredients and use the mixture to top each of the sweet potato stacks.
These air fryer sweet potato casserole stacks take roughly half an hour to cook in the air fryer. It doesn’t matter if they’re done before the rest of the meal is ready. They will keep warm in the air fryer until you’re ready to serve the meal.
Can I Use Regular Potatoes Instead?
If you’re wondering whether you can swap regular potato for the thin sliced sweet potato, then yes. You can! Of course the result will be a little different. So if you want to make a stacked potatoes recipe but don’t necessarily want sweetness, use regular potatoes instead.

Do I Have to Peel the Potatoes First?
I didn’t peel them for this air fryer sweet potato casserole stacks recipe. Sweet potato skin is perfectly safe to eat (and rich in fibre and antioxidants!) If you prefer not to peel yours either, just give them a good scrub before you start the recipe to get any dirt off.
A Few Variations to Try
There are different tweaks you can make to this stacked potatoes recipe. I love to add a spoonful of sour cream on top when I serve these but you could try plain Greek yogurt or even add some extra butter.
For a colourful look, add a small sprig of fresh basil or any other fresh herb you want on top of the sliced yam casserole.
Another variation would be using different kinds of cheese. I like to use mozzarella between the potato slices because it sticks them together so well and tastes mild. Try swapping some of the mozzarella for cheddar or even gruyere.
A Few Tips and Tricks
Because these are cooked in an air fryer and not a muffin pan, you will need to make sure the stacks hold together. The easiest way is to use cupcake liners, either paper or silicone ones. Once the air fryer sweet potatoes are cooked through, the melted cheese will hold them together so you can simply discard the liners before serving.
Don’t make these ahead because the salt will start to pull moisture out of the potato. Also, if you cut sweet potatoes too far ahead, they will start to go brown. They’ll taste the same but it’s best to prepare this recipe just before cooking it. If you’re reading this after slicing your potatoes, just toss them in oil immediately and that will stop the browning!

Air Fryer Sweet Potato Casserole Stacks
Ingredients
- 6 sweet potatoes, thinly sliced
- 1/4 Cup olive oil, extra virgin
- 2 Cloves garlic , minced
- 1 Teaspoon salt , kosher flakes
- 1/2 Teaspoon black pepper
- 1/2 Cup mozzarella , shredded
- 1/4 Cup unsalted butter
- 1/2 Cup panko bread crumbs
- 1/4 Cup parmesan , grated
- 1 Tablespoon basil, chopped
Instructions
- Preheat the air fryer to 340 degrees F.
- Thinly slice sweet potatoes and add to a large mixing bowl. In a separate small bowl, mix olive oil, minced garlic, salt, and pepper. Combine with the sweet potatoes and stir to coat.
- Use foil muffin tins, or small pieces of foil to hold the potato stacks in place. Spray each tin lightly with non-stick cooking spray. Arrange sweet potato slices in a stack with a pinch of mozzarella cheese between each slice until the tin is almost filled, or about 2” high.
- Combine panko, parmesan, and basil in a bowl. Pour in melted butter and stir. Top each sweet potato stack with a spoonful of breadcrumb mixture.
- Place into the air fryer and cook for 30 minutes.
- Let cool slightly before serving. Top with sour cream if desired.
