Prepare the potatoes:  The first step in this popular viral recipe is to peel them and then slice them as thin as possible, using a mandolin (here) to ensure they’re all the same thickness.
Create the stacks: Stack the potato slices on top of one another, making stacks of ten pieces each, and trim the edges to shape them into 1/2-inch squares.

Ingredients 

  • 4 russet potatoes
  • canola oil, for frying
  • 2 Tablespoon olive oil
  • ½ Teaspoon salt
  • ½ Teaspoon oregano
  • 1 Teaspoon garlic powder
  • 3 Tablespoon Parmesan, grated
  • 3 Cloves garlic, minced
  • 2 Tablespoon parsley, chopped

Instructions 

  • Heat oil in a dutch oven to 325 degrees F.
  • Peel the potatoes and discard peelings.
  • Use a mandolin to slice potatoes thin. Form each into stacks of 10.
  • Cut off the edges of the potatoes to form into rectangles. Cut each into ½” squares.
  • Carefully add stacks to the hot oil. Fry for 7 minutes, or until golden brown and crunchy.
  • Add to a large mixing bowl. Toss with olive oil, salt, oregano, garlic powder, minced garlic, chopped parsley, and parmesan.
  • Serve warm
