Fried Potatoes in Stacks FAQs

How can you cut these thin enough without a mandolin?

If you don’t have a mandolin, you should really consider investing in one. You’ll be able to get super-thin slices that go really crisp in the hot oil. You can also use a sharp knife which will take longer but still work, to thinly slice your potatoes.

What are some ways to make these even more special?

Instead of tossing the fried potato slices in olive oil, you could use melted butter, goose, or duck fat, which is even richer than melted butter. A little white truffle oil also adds a luxurious taste. Flaky sea salt is nice since those big flakes look pretty on the finished dish.
