Assemble the sandwiches:  Divide the meat and cheese between the subs, add the chopped salad on top, and finish with a sprinkling of oregano. I usually let the chopped filling sit for about 5 minutes before assembling the sandwiches. It gives the dressing a chance to coat everything evenly and the flavors come together even better.

Store:  I’d recommend refrigerating it for half an hour before serving, so the flavors can meld and intensify. Or you can eat the sandwich as soon as it’s made or even make it a couple of hours ahead if you prefer and keep it refrigerated until serving.
If you’re making these ahead for a picnic or party, keep the chopped filling and rolls separate until just before serving. The filling actually tastes even better after chilling for 30 minutes, and the bread stays perfectly fresh.
Freeze:  This chopped Italian sub recipe isn’t suitable for freezing, as it can affect the texture and overall quality of the bread and filling.

  • 6 sub rolls, Italian
  • 6 Slices Genoa salami
  • 6 Slices capocollo
  • 6 Slices salami, Calabrese
  • 6 Slices provolone cheese
  • Cup banana pepper rings, from a jar
  • 3 pepperoncini, from a jar
  • 1 red onion
  • 2 Cups green lettuce, chopped
  • 2 Tablespoon red wine vinegar
  • 2 Tablespoon olive oil, extra-virgin
  • 1 ½ Cups mayonnaise
  • ½ Teaspoon salt
  • 1 Teaspoon black pepper, coarsely ground
  • 2 Teaspoon oregano, dried, plus more for garnish

Instructions 

  • Remove seeds from pepperoncini and discard. Finely chop banana peppers, pepperoncini, red onion, and lettuce. Add to a large mixing bowl.
  • Next, chop calabrese salami, Genoa salami, capocollo, and provolone cheese into small pieces. Add to the mixing bowl.
  • Add mayo, red wine vinegar, olive oil, salt, pepper, and oregano to the bowl.

  1. This is perfect, yummy, fun to make and definetly feeds a crowd. I doubled the recipe, and everyone agreed it was awesome. The “Mayo Topic”…….Perhaps too much for my liking, but like any sandwich you add what you like as you make it….so use your own judgment, make it to your taste preference!

    This is a great idea for a picnic or casual buffet. Italian meats are really expensive so you can substitute some ham for part of this. We all thought there was waaay too much of the mayo dressing. It adds flavor but kind of smothers the meat. I will add half next time to help keep things together but rely more on sub sandwich oil dressing for an Italian punch. You can also leave onions and peppers on the side if serving more particular eaters.

    I made this sandwich for my family on a whim one day to test it out. IT WAS A HUGE SUCCESS! So good that now the kids want it every Thursday night. Friday nights are leftover nights so first come first serve. And it even better the longer it sits.👍
