Avocado Herb Green Goddess Dip

Ingredients 

  • 1 Cup Greek yogurt
  • 4 Ounces cream cheese, softened
  • ½ lemon, juiced
  • 1 Tablespoon olive oil
  • 1 avocado
  • ¼ Cup green onions
  • 1 shallot
  • 2 Cloves garlic
  • ½ cucumber
  • 1 Tablespoon dill
  • 2 Tablespoon cilantro, chopped
  • ¼ Cup basil, chopped
  • 1 Cup spinach
  • 1 Teaspoon salt, himalayan pink if you have it
  • 1 Teaspoon black pepper, coarse

For dipping 

  • mini peppers
  • carrots , sliced
  • bell peppers , sliced
  • cucumbers  , sliced
  • pita chips  
  • cherry tomatoes  

Instructions 

  • Roughly chop avocado, green onions, shallot, and garlic.
  • Peel the cucumber. Grate into a bowl lined with a cheesecloth. Gather the cloth over the cucumber and squeeze out excess moisture. Save 1 tbsp of the cucumber juice.
  • Add avocado, green onion, shallot, garlic, cucumber, dill, cilantro, basil, and spinach to a food processor or blender and blend for 30 seconds to purée, then add to a mixing bowl.
  • Next, add Greek yogurt, cream cheese, lemon juice, reserved cucumber juice, salt, and pepper to the bowl. Use a whisk or a hand mixer and blend until smooth.
  • Drizzle olive oil over the top and a pinch of cracked black pepper. Serve with fresh veggies.
