Banana Pudding Poke Cake Ingredients

A complete list of ingredients and amounts can be found in the recipe card below.

Yellow cake mix: The base layer for this dessert, soft and fluffy when baked. I used Pillsbury Moist Supreme Yellow Cake Mix. You can also use a 13 ¼-ounce mix, but the cake may not be as tall.
Oil: Adds moisture and tenderness to the cake batter. Canola oil works, or vegetable oil if you prefer.
Eggs: Provide structure and help the cake rise evenly. My eggs were cold and the cake baked just fine.
Milk: Used in both cake batter and pudding for a creamy texture. You can use whole milk if you want, but I find 2% milk sets predictably and is less likely to thicken too fast.
Instant banana pudding mix: Brings the signature banana flavor and creamy texture. You need banana instant pudding, not the cook and serve kind that you have to cook on the stove. I used a large, 5.1-ounce box.
Bananas: Fresh fruit layers add flavor and softness to each slice. Save your over-ripe bananas for banana bread. It’s best to use ripe or slightly under-ripe bananas here, so you can cut clean, firm slices.
Whipped topping: Light, creamy finish that balances the cake and pudding layers. I used Cool Whip.
Vanilla wafers (optional): Crushed wafers give crunch and contrast on top.

Substitutions and Variations

Gluten-free option: Use a gluten-free yellow cake mix and check pudding is free from gluten too.
Pudding swap: Try vanilla or French vanilla for a softer banana note. You could also make your own banana pudding recipe.
Less sugar: Use a sugar-free cake mix and other sugar-free ingredients.
Cool Whip alternative: Try homemade whipped cream, perhaps with a few drops of vanilla extract mixed in.
Dairy tweak: Use dairy-free whipped topping if needed for guests.
Fruit twist: Add sliced strawberries or peaches over the pudding layer. Other options include crushed pineapple and canned apple slices for an extra moist cake.
Other cookies: Swap the crushed vanilla wafers for another kind of cookie.

How to Store Banana Pudding Poke Cake

Freeze: Freeze the baked cake layer only before poking holes. Wrap well for up to 3 months.
Thaw: Thaw the cake overnight in the fridge before adding pudding and topping.

Top Tips

Space holes evenly: Aim for neat rows so pudding spreads through every slice. You may want to use a piping bag to get more pudding into the holes.
Whisk pudding just right: Stop when it thickens so it flows but doesn’t run.
Add freshly sliced bananas late: Slice just before topping so the fruit stays fresh looking. You could also toss your banana slices in lime or lemon juice to slow down the oxidation (when the banana slices turn brown).
Chill long enough: A full chill firms layers and makes clean cuts easy.

Banana Cream Poke Cake FAQs

Can I bake a cake from scratch instead of using a mix?

Yes, any 9 x 13-inch yellow or vanilla cake works as the base.

Why do I need to poke holes?

The holes let pudding soak into the crumb so every bite is creamy.

How do I avoid lumpy pudding?

Whisk in stages, let it rest briefly, then whisk again until smooth.

My cake mix says to add water, not milk. Which should I use?

When making this recipe, I prefer to use milk because it makes the cake moist.

Instructions

  • Preheat the oven to 350°F. Grease a 9 x 13-inch baking dish or pan with cooking spray and set aside.

Make the Cake Batter

  • In a large mixing bowl, combine the yellow cake mix, oil, eggs and 1 cup of the milk.
  • Use an electric mixer to mix the batter until everything is combined.

Bake the Cake

  • Pour the batter into the greased baking dish and bake for 25 to 30 minutes or until a thin knife inserted in the middle comes out clean.
  • Let the cake cool to room temperature.

Make the Pudding

  • Pour the remaining 2 cups of milk into a large mixing bowl and whisk in the banana pudding mix until it starts to thicken.
  • Let the pudding rest for 2 to 3 minutes.

Add the Pudding to the Cake

  • Use the handle end of a wooden spoon to poke holes about 1 inch apart and 2 inches deep all over the surface of the cake.
  • Spread the banana pudding over the top of the cake evenly, pressing it into the holes as you go. Alternatively, you can pipe about half of the pudding into the holes and spread the rest of the mixture over the top of the cake.

Add the Toppings

  • Slice 2 of the bananas into ¼-inch wide medallions and place them in a single layer of the pudding.
  • Spoon the whipped topping on top of the cake and smooth it out.

Chill the Poke Cake

  • Cover the cake with plastic wrap and chill for at least 4 hours.
  • Top with extra banana slices and crushed vanilla wafers, if liked, just before serving.
  • Serve chilled.
