Brie Cranberry Bites Appetizer

The creaminess of brie cheese pairs beautifully with the sweet flavour of cranberry sauce in these brie cranberry bites in puff pastry.

Ingredients 

  • 1 Can crescent roll dough
  • 6 Ounces brie cheese, about ¾ Cup
  • ¼ Cup whole cranberry sauce
  • ¼ Cup orange marmalade
  • ¼ Cup pecans, chopped
  • nonstick cooking spray, for greasing
  • fresh rosemary sprig, optional garnish

Instructions 

  • Preheat the oven to 375 degrees F. Spray cooking spray onto a mini muffin pan.
  • Add the whole cranberry sauce and orange marmalade to a bowl and mix until well combined. Set aside.
  • Slice the brie cheese into small, 1-inch squares using a sharp knife (feel free to leave the rind on). Set aside.
  • Roll out the crescent roll dough onto a floured surface.
  • Use your fingers to press the perforated lines together so that the dough makes one large rectangle.
  • Using a sharp knife, cut the crescent roll dough into 24 equally-sized squares. Gently press each square into the mini muffin pan molds.
  • Add 1 cube of brie cheese, 1 tablespoon of cranberry-orange mixture, and a pinch of chopped pecans to each mini muffin.
  • Bake the bites for 10 to 12 minutes, or until the dough is golden.
  • Allow the bites to cool for about 10 minutes before removing from the mini muffin pan.
  • Garnish each bite with a small sprig of rosemary.

    These are so good and smell amazing! I struggle with the cheese bubbling out of the muffin cups leaving less than I would like. Any tips?

    1. Hmm, maybe your oven is running hot. I’d try reducing the heat a little. If the cheese is melting too much, you can push it back into the cups while still melted, or perhaps try another brand of cheese?

  2. I haven’t tried this recipe yet but, wanted to make a comment RE: ingredients. Cresent dough is available as a sheet. Using the sheet will eliminate the need to press the perforations. I use the Cresent dough sheet when I make Slopy Joe casserole!
