Whether you enjoy leftover ham, broccoli and cheese crescent cups as a brunch, breakfast or appetizer, the flavours of ham and cheese are delicious. This snack is so simple to make and it’s a great recipe for leftover ham.

Leftover Ham, Broccoli and Cheese Crescent Cups Ingredients
In addition to crescent rolls and leftover ham, this crescent roll recipe calls for shredded cheese and broccoli. I like to use cheddar but you can use any kind of cheese you prefer. Muenster, Swiss cheese, pepper jack, and Mexican blend are just a few examples.
I find it best to shred my own rather than buy the kind in the Ziploc bags which contain potato starch or similar (to stop the shreds sticking to each other). Shredding your own gives a better melt. Use the ready-shredded kind if you’re in a hurry though.
Add some salt and pepper and a few chopped chives for garnish, and you have all the makings of this tasty brunch, breakfast or appetizer.
How to Make this Crescent Roll Recipe
Chop the broccoli and ham and mix in the cheese. It’s best to chop the pieces quite small rather than having big chunks. Next, you can unroll the crescent rolls into triangles.
Put these rolls into a greased muffin tin then divide the ham mixture between them. Roll the crescent rolls up then grind some salt and pepper on top. Bake the crescent roll breakfast cups until golden then serve, garnished with fresh chives if liked.
If you like ham and cheese toasties you’re definitely going to love these. Instead of sandwich bread though you can enjoy a buttery, flaky crust. Of course, you can also tweak the ingredients, adding anything else you want. So if you have some leftover ham I suggest you bookmark this recipe. It’s so quick and easy you will want to make it often!
How to Serve this Recipe for Leftover Ham
Whether you enjoy them chilled, at room temperature or even still warm from the oven, these leftover ham, broccoli and cheese crescent cups are sure to hit the spot. Enjoy them as they are or pair them with a dipping sauce like Dijon mustard or BBQ sauce. If you made a honey ham, this is a great recipe to try!
Don’t serve them straight from the oven though – the cheese filling gets molten hot! Let them sit for at least 15 minutes before serving. One of these is filling enough for breakfast or you might like to add a fruit cup or some yogurt for a heartier brunch.
This crescent roll recipe is portable too, so consider them for a picnic or potluck gather. Of course they always disappear fast when served as a brunch, breakfast or appetizer.
Variations and Tweaks
Feel free to make any changes you want. As well as using a different kind of cheese, you might like to swap the ham for deli turkey, cooked bacon or even green onions if you want to make these meat-free.
It is a great recipe for leftover ham but you can always switch up the ingredients if you want to experiment. If you like your snacks meaty, why not pair two meats, such as bacon and deli turkey or ham and pepperoni perhaps?
Crescent Roll Breakfast Cups FAQs
Store leftovers in the refrigerator in a Ziploc bag for 2 or 3 days. I haven’t tried freezing them but I’m sure they would freeze well. Why not make a batch? That way you always have a snack you can pull out of the freezer and thaw in the microwave.
You can use any brand you prefer for making leftover ham, broccoli and cheese crescent cups. Pillsbury is very popular and Aldi also offers an own-brand crescent roll which is especially flaky and delicious. But if you have another favourite, go ahead and use that. I often keep a tube or two of crescent roll dough in the refrigerator to make little treats like these or even pumpkin bites.
