Bratwurst: Bratwurst is a delicious option but feel free to use any type of sausage in its place, such as chicken sausage, spicy Italian sausage or even combine sausage varieties.
Bell peppers: Although orange and red peppers are tasty here, you can sub yellow or green, or even a mixture of different color peppers, if you want to.

Prepare the seasoned butter:  Melt the butter and put in in a bowl or jar with the onion powder and dried parsley and mix well.
Make the foil packs: Divide the peppers and onions between four 12-inch squares of foil and top with the butter mixture evenly and then the sausage. Close the foil packs tightly.
Cook the sausage pepper foil packets: Cook them on a preheated grill or campfire for 15 to 20 minutes or until done.
Brown the sausage: Take the sausage out of each pack and put it over a medium high heat, typically the center of the grill, while you push the foil packs to the sides to keep them warm. Serve immediately and enjoy!

Substitutions and Variations

Make it deluxe: Add spinach and mushrooms, along with some parmesan, fresh minced garlic, and fresh parsley, basil or oregano. Drizzle a little olive oil on top if you like.
Spice things up: A pinch of red pepper flakes adds a hot element. Pair this with some Italian seasoning if you like, or a pinch of paprika.
Appeal to the kids: Add shredded cheese to make it more kid-friendly.
Vegetarian option: Sub a vegetarian “sausage” or use marinated firm tofu. You can also add canned pulses or beans instead of the pre-cooked sausage. Par-cooked red potatoes are good with the sausage peppers mixture as well.
Vegan option: Sub margarine or coconut oil for the butter and sub your preferred vegan protein for the sausage.

Serving Suggestions

Appetizers:  While you’re waiting for your Italian sausage foil packets to cook, you might like to enjoy some appetizers, such as jalapeno popcorn that you make at home first, or mini pizza bagel bites or smoked cream cheese which you can warm up on the campfire.
Desserts:
Graham cracker toffee bars make a tasty dessert, or you could enjoy some nut brittle. And don’t forget the ingredients for making s’mores – camping just isn’t the same without them!

How to Store Campfire Sausage and Peppers

Store:  Keep leftovers refrigerated in an airtight container and eat within 3 days.
Reheat:  Give it a couple of minutes in the microwave or warm it back up in a pan on the stove. Or, if you’re still camping, pop it on the next night’s campfire!

Top Tips

Plan ahead: If you’re taking this camping, it’s easier if you prepare the butter mixture ahead and just keep it in a small jar.
Use the extra bratwurst: As most bratwurst packages seem to come in multiples of 5, you can add an extra one to one of the foil packages. Another option is making 5 packages instead of 4 of them.
Luscious leftovers: Chop the leftovers and use them as a baked potato filling or enjoy them with pasta or rice.

Sausage and Bell Peppers Foil Packet FAQs

What kind of foil is best for making foil packs?

You need to use heavy duty aluminum foil (here), as cheap foil is likely to tear, and that’s the last thing you’d want.

What’s the difference between foil packet meals and hobo dinners?

They’re different terms for the same thing, although the term hobo dinners can be offensive to some. Both terms are widely used in the camping community. Homeless people living in camps were known as hobos, historically, and they had to be frugal with food, growing their own or scavenging or foraging. They would then cook their ingredients over fire, which was a cost-effective and simple method.
