How to Store Valentine Brownies

Store: Let the brownies cool completely in the pan. You can keep them overnight in an airtight container or you can wrap foil or plastic wrap over the baking pan. You don’t have to cut them first. In fact, they’ll stay more moist if you don’t. This is important if you want chewy brownies. Once the brownies cool, you can cut with a sharp knife just prior to serving.
Freeze: Wrap them in plastic wrap and then in foil, and freeze for up to 3 months.
Thaw: Defrost overnight in the fridge.

Top Tips

Don’t overmix: Stir until just combined for a tender crumb.
Watch the bake: Remove when a toothpick has a few moist crumbs.
Cool fully: Cutting too soon makes brownies fall apart.
Use parchment: Makes lifting the whole slab out for clean slicing easier.

Valentine’s Day Brownies FAQs

Do I need to sift the cocoa?

It helps prevent lumps, but whisking well with oil usually does the trick.

Can I double this recipe?

Yes, bake in a 9 × 13-inch pan and extend the baking time slightly.

What kind of sprinkles work best?

Any type works, though I find that larger jimmies hold their color best during baking.
