Lemon and strawberry cookies are one of my favourite crinkled varieties. They’re soft, dense and a little chewy, and of course using boxed cake mix makes them a snap to make. Even newbies to the world of home baking will find them super-easy.

Pink Lemonade Crinkle Cookies FAQs

Can you make lemon and strawberry crinkle cookies ahead?

It’s fine to make strawberry lemonade cake mix crinkle cookies in advance since they will keep for a while. Well maybe not in this house but that’s another story! Store them covered at room temperature for up to a week or refrigerate them for up to a couple of weeks. You can also freeze the pink cake cookies for up to 2 months.

Which brand of lemon cake mix is best to use?

It doesn’t make much difference really, although I’ve had good results using the Betty Crocker brand of lemon cake. The Duncan Hines one is also pretty good.

  • Preheat your oven to 350 degrees F.
  • Line two cookie sheets with parchment paper or silicone baking mats.

  • Using a cookie scoop or a spoon, scoop all of the dough into approx 1.5” to 2” balls.

  • Place each of the powdered balls onto your prepared cookie sheets, leaving a couple inches between each.
  • Place the cookies in the preheated oven, and bake them for 8 to 10 minutes rotating the pans halfway through.
  • Remove the cookies when they are done baking and let cool on the trays.

Notes

Be careful not to over mix, over mixing will cause the strawberries to dye the whole dough pink… which is totally fine but it won’t have the same yellow/pink mix as you see in the pictures.
Pro-tip – REALLY pack the powdered sugar on each dough ball, you can even leave a little mound on top!
If not looking crinkled, try to put tray with balls in freezer for 15 minutes before baking.
