Country biscuit dough: I used a can of dough but you can make your own pizza dough if you prefer.
Pizza sauce: Any brand will work here.
Cheese: I used a shredded cheddar mix and some parmesan cheese.
Black olives: Choose pitted olives (nobody wants to bite down on an unexpected olive pit!)
Pepperoni: One of the most popular pizza toppings of all time.

How to Make Pizza Pockets in a Pie Iron

Prepare a campfire: You can cook pizza pockets over flames or embers so prepare the fire as needed.
Divide up the dough: Divide the biscuit dough into 8 even-sized squares.
Fill the pie iron: Add a piece of the dough to the bottom plate of your greased pie iron and then load up the toppings followed by another piece of the dough on top.
Cook the pizza pockets: Close and secure the pie iron and cook the pizza pocket over the campfire for a few minutes, until the crust is golden brown, flipping it over as needed. Carefully unlock the pie iron and remove the pizza pocket.
Repeat and enjoy: Repeat with the remaining dough and fillings until you’ve cooked all four pizza pockets. Serve them hot and enjoy!

Substitutions and Variations
Gluten-free option: If you want a gluten-free version, use gluten-free dough.
Toppings: I used sliced black olives, cheese and pepperoni but anything goes! Mozzarella cheese is always good or just use your preferred pizza pie toppings. Any proteins (chicken, sausage and so on) should be cooked through before adding it.
Pizza sauce: You can use anything – homemade marinara is always good, or you could use a creamy sauce instead of a tomato-based one.

Reheat: You can warm a pizza pocket back up over the campfire or (if you’re home) in the microwave, air fryer or oven.

Grease the pie iron: Lightly oiling the inside of your pie iron with olive oil or similar is recommended. You don’t want your pizza pocket to stick to the plates!
Be careful: Take care when cooking over an open flame. Also, take care not to burn yourself on the pie iron when refilling it between pizza pockets. If this is a concern, invest in several pie irons.
Shaping the pizza dough: You need to make squares that are slightly larger than your pie iron, as it has to fill the complete concave shape on either side.
Check for doneness: The dough needs to cook and the filling just needs to warm up, so a few minutes is likely all you need, although the exact timing depends on the heat of your campfire and whether you’re burying the pie iron in campfire embers or holding it over the flames.

It’s not compulsory but I heartily recommend you do. You don’t want any injuries while enjoying your camping trip in the great outdoors! I use these to move the grill grate, pick up cookware and even rearrange logs if you’re burning those.
Anything goes! Cooked sausage, cooked bacon, rotisserie chicken, cooked shrimp, or cooked steak would be good, and perhaps some veggies too like bell pepper or mushrooms. Once you start making pizza pockets, you’ll want to try lots of different variations.

Easy Campfire Pie Iron Pizza Recipe

Pie Iron Pizzas
Ingredients
- 1 Package canned biscuits, 10-count, or use homemade dough if preferred
- oil, for greasing the pie iron
- 1/3 Cup pizza sauce
Optional Toppings:
- cheese, shredded
- pepperoni, sliced
- black olives, sliced
- and anything else you like!
Instructions
- Prepare your campfire.
- Divide the biscuit dough into 8 pieces and shape each piece into a 4 ½ square.
- Grease your pie iron and add one dough square to the bottom.
- Add pizza sauce and your preferred toppings. Add another dough square on top.
- Lock the pie iron and cook over the campfire flames or embers, flipping often for an even heat. Check after 2 or 3 minutes. Once the dough is cooked and golden brown, the pizza pocket is done.
- Remove from the fire, unlock the pie iron and remove the pizza pocket.
- Repeat with the remaining dough squares and toppings to make the rest of the pizza pockets. Either let the pie iron cool between pizza pockets or be very careful not to burn yourself!
