  • 6 Slices bacon, thick-cut, diced
  • 1 Pound smoked sausage, sliced into ¼-inch rounds
  • 1 onion, medium, diced
  • 2 carrots, diced
  • 2 Stalks celery, diced
  • 3 Cloves garlic, minced
  • 1 Teaspoon dried thyme, or 1 Tablespoon fresh thyme
  • ½ Teaspoon smoked paprika
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • 2 Tablespoons all-purpose flour
  • 5 russet potatoes, medium, peeled and diced
  • 4 Cups chicken broth
  • 2 Cups water
  • 1 Cup heavy cream
  • ¼ Cup fresh parsley, chopped

Instructions
