  • 1 Pound gnocchi, shelf-stable
  • 1 Pint cherry tomatoes
  • 12 Ounces Italian sausage, I used chicken sausage, fully-cooked
  • 2 Bunches broccolini, cut into florets, about 3 cups florets
  • 4 Tablespoons olive oil
  • 1 Teaspoon kosher salt
  • 2 Teaspoons Italian seasoning
  • black pepper, freshly ground, to taste
  • ¼ cup parmesan cheese, grated
  • 1 Bunch fresh thyme, optional

Instructions 

  • Preheat the oven to 425 degrees F.
  • Prepare the ingredients. Cut the broccolini into bite-sized florets. Slice the chicken sausage into thin slices, about ½-inch thick.
