Green onions: Provide a fresh bite and color on top. You can add extra, after shredding the chicken, if you want it more oniony.

How to Make Creamy Crockpot Crack Chicken

Add chicken: Put the chicken breasts into the slow cooker.
Season: Pour in the chicken broth and sprinkle dry ranch seasoning mix over the chicken.
Add cream cheese: Scatter the cubes over the top of the chicken mixture, then cover and cook until the chicken is fully cooked and tender. The cooking time can vary, so check often (you don’t want to overcook the chicken!)
Shred: Remove the chicken, shred it with two forks, then return it to the slow cooker and stir it into the sauce.
Add bacon: Stir in half the cooked bacon.

Freeze: I don’t recommend freezing as the cream cheese sauce can separate.

Ingredients 

  • 2 ½ Pounds chicken breasts, boneless and skinless
  • 16 Ounces cream cheese, cut into cubes
  • 10 Slices bacon, cooked and chopped
  • 1 ½ Cups cheddar cheese, freshly shredded
  • ½ Cup chicken broth, low sodium, more as needed
  • 1 ½ Packets ranch seasoning mix, 1-Ounce packets

For Garnish

  • green onions, sliced

Instructions 

  • Add the chicken to your Crockpot in one layer.
  • Add the broth and sprinkle over the ranch seasoning mix.
  • Add the cream cheese cubes.
  • Cover and cook for 2 to 3 hours on high or 5 to 6 hours on low.
  • Remove the chicken to a cutting board and use 2 forks to shred into bite-sized pieces.
  • Return the shredded chicken to the slow cooker and stir to combine.
  • Add more chicken broth if the mixture seems dry.
  • Stir in half the bacon, then top with the shredded cheddar cheese and the rest of the cooked bacon.
  • Cover and cook until the cheese melts.
  • Serve hot, garnished with green onions if liked.
