It’s special enough for a birthday, Thanksgiving or Christmas breakfast. The sausage, Gouda and apples combine so well in this dish which is a type of breakfast strata. A strata is a puffed-up casserole or soufflé type dish.

This breakfast casserole with apples includes cinnamon, rosemary and thyme to add flavour. The cinnamon pairs well with the apple in the mixture while the herbs suit the sausage and onion flavours.

Ingredients for this Easy Family Brunch Recipe

You can use either sourdough bread or English muffins for this apple, Gouda and sausage breakfast casserole. Ground breakfast sausage works well as the meat and then you’ll need apples. Tart ones like Granny Smiths or Jonagold would work well here.

For the onion you can use something sweet like Vidalia or else just a regular yellow onion or a couple of shallots. Other ingredients include milk, eggs, and cheese. Gouda is really good or you could try Havarti instead if you prefer.

How to Store Leftovers

If you have some over, it will keep in an airtight container in the refrigerator for 3 or 4 days. You can warm it back up in a hot oven or in the microwave. This breakfast casserole with apples can be frozen for up to 3 months. If you freeze it, let it thaw overnight.

Can You Make this Thanksgiving or Christmas Breakfast Ahead?

A sausage, Gouda and apples casserole can be prepared the night before, refrigerated and then baked in the morning, which is timesaving and handy. I actually prefer making it ahead. All the flavours really soak into the bread this way. So feel free to prepare this easy family brunch recipe ahead (maximum 12 hours ahead) for a tasty result the following day.

Variations to the Recipe

This tasty Thanksgiving or Christmas breakfast can be tweaked if you like. Try pears instead of apples or lean ground beef instead of breakfast sausage.

Sub shallots for the onion or another kind of bread than sourdough. A crusty loaf would be good or you could use gluten-free bread if that’s more suitable for you.

Throw in a handful of dried cranberries for added sweetness or use more than one type of cheese in the breakfast casserole with apples. Add some bacon or even a chopped ham steak. Mushrooms would work, along with cherry tomatoes. You can many any of these variations or perhaps you can think up some of your own.

I like to serve this apple, Gouda and sausage breakfast casserole with some fresh rosemary on top, either the leaves or a sprig or two. This just adds some more colour to the plate. You can use dried rosemary in there but fresh is the way to go for a garnish. Another colourful garnish would be a halved cherry tomato perhaps.
