- 4 Ounces cream cheese, at room temperature
- ½ lemon, juiced
- 1 Tablespoon olive oil
- 1 avocado
- ¼ Cup green onions
- 1 shallot
- 2 Cloves garlic
- ½ cucumber
- 1 Tablespoon dill, freshly chopped
- 2 Tablespoon cilantro, freshly chopped
- ¼ Cup basil, freshly chopped
- 1 Cup spinach, fresh
- 1 Teaspoon salt, Himalayan pink if you have it
- 1 Teaspoon black pepper, coarse
For Dipping

Instructions
- Roughly chop avocado, green onions, shallot, and garlic.
- Peel the cucumber. Grate into a bowl lined with a cheesecloth. Gather the cloth over the cucumber and squeeze out excess moisture. Save 1 tablespoon of the cucumber juice.
- Add avocado, green onion, shallot, garlic, cucumber, dill, cilantro, basil, and spinach to a food processor or blender and blend for 30 seconds to purée, then add to a mixing bowl.
- Next, add Greek yogurt, cream cheese, lemon juice, reserved cucumber juice, salt, and pepper to the bowl. Use a whisk or a hand mixer and blend until smooth.
- Drizzle olive oil over the top and a pinch of cracked black pepper. Serve with fresh veggies.
