How do I know when the Rolos are soft enough?

Christmas Rolo Pretzel Sandwiches

Ingredients 

Instructions 

  • Preheat the oven to 250°F and use parchment paper to line a baking sheet.
  • Arrange 40 pretzel snaps on the prepared baking sheet in a single layer.
  • Top each pretzel with an unwrapped Rolo.
  • Bake for 3 to 4 minutes or until the Rolos have softened but are not completely melted.
  • Remove them from the oven and top each Rolo with another pretzel snap, gently pressing it down to flatten the Rolo and make a sandwich. Don’t flatten it too much so the Rolo spills out the sides.
  • Put the baking sheet in the refrigerator and chill for 20 minutes or until the chocolate hardens back up.
  • Now melt the candy wafers in a bowl in the microwave using a low or defrost setting in 30 second increments, stirring at each interval for even heating, until smooth.
  • Remove the chilled Rolo pretzel sandwiches from the fridge and dip each one halfway into the melted wafers, shaking off any excess and then put the sandwiches back on the baking sheet and top with the sprinkles right away.
  • Repeat the coating and decorating the rest of the sandwiches and then put the tray back in the fridge to chill for another 10 to 20 minutes, or until the outer coating has set fully.
