This is a very easy beef and potato bake which uses tasty ingredients and is really filling! It’s a one pot beef recipe with a layered potato topping, meaning you don’t have to get a whole bunch of pots, pans and dishes dirty to make it. So why did I love making this? Well first of all, this beef and potato one pot meal was easy. I mean, really easy! It’s based on meat and potatoes meaning it appeals to pretty much everyone.
I also loved how falling apart tender the meat came out. The carrots round out the dish and add nutrients too. And then there is the layered potato topping, which is amazing.
For the beef I’d recommend stewing type cuts which do well with long, slow cooking. So consider chuck or beef leg roast, flank roast or skirt steak. Leave the fat on or remove it if you prefer. You can make this easy beef and potato bake however you like it.
Beef and Potato One Pot Meal Ingredients
So you have beef, potatoes and carrots? What else goes into this mouth-watering chuck roast recipe? Well, garlic, thyme, rosemary and a bay leaf add an aromatic herby flair and pair well with the main ingredients.
Beef broth and red wine give this easy beef and potato bake so much flavour. Not a fan of wine? Then just use all beef broth. If you do like wine, use something that you’d be happy to drink. Then you can have a glass with the meal!
There are three cooking methods used in this easy beef and potato bake. And those are sautéing on the stove, oven baking and finally broiling. But you’re still only using one pan for this chuck roast recipe, so… less washing up!
If you prefer to use the slow cooker, that is also possible. Brown the meat and put it in the slow cooker. Then add the vegetables. Stir the butter and flour in the pan you browned the chuck roast in, then mix in the broth and cook for a few minutes. Tip this into the slow cooker too, adding everything else except the potatoes.
Arrange the potatoes on top to make the layered potato topping. Then simply cover and cook on low for 8 hours or high for 4 hours. The top won’t crisp up but you could always give it a final broil or use a kitchen blowtorch on it!
This one pot beef recipe is also good reheated, so if you have leftovers that is fine. Once it’s completely cooled down, you can store it in an airtight container in the refrigerator for 5 days or freeze it for up to 8 weeks.
Good Side Dishes for Easy Beef and Potato Bake
This one pot beef recipe with layered potato topping is a meal in one. You have meat in there, along with vegetables and potatoes. This means technically you might just want to serve it by itself.
I’d probably pair a green vegetable with this chuck roast recipe though. Maybe broccoli, green beans or summer squash, for example. A salad would also work, such as some mixed crisp greens with a simple vinaigrette dressing.
Layered Potato Topping Tips
This beef and potato one pot meal has a special topping. Because I made this in a round pot, I arranged the potatoes in circles, as you can see in the photo. There are two reasons for that.
First because it looks pretty, and second because it’s easier to layer them that way in a round pan! I wonder how this would taste using half regular potato and half sweet potato? That would be good, I’m sure, and also look nice if you layer the potatoes alternately.
This tasty, easy beef and potato bake is well worth making. Stewing beef is a relatively cheap cut to buy, and the other ingredients are economical as well. This chuck roast recipe sounds like a great winter warmer and it really is. But honestly I’d be happy to enjoy this one pot beef recipe during any season!

Beef and Potato Bake – One Pot Meal
Ingredients
- 2 Pounds chuck roast
- 1 Tbsp. vegetable oil
- 1/2 Cup butter
- 1 Tsp garlic
- 6 yellow onions, peeled and diced
- 4 carrots, peeled and cut into 1 inch pieces
- 1 Tbsp. all purpose flour
- 1 Cup red wine, or white if that is all you have
- 2 Cup beef broth
- 2 thyme sprigs
- 1 sprig rosemary
- 2 bay leaves
- 2 Pounds potatoes, peeled and cut into ¼ inch slices
- salt and black pepper, to taste
Instructions
- Preheat oven to 325°F.
- In a large oven safe pan, brown the meat with the oil. Don’t crowd the pan. This will need to be done in several batches.
- After the meat has browned, remove from the pan and add a little slice of butter, the onions and carrots and cook for 1 minute.
- Add the garlic and the flour and stir to combine, then add the red wine and stir well.
- Add the meat and all the spices, along with some salt and pepper, and stir. Add the broth, then lay the potato slices around the top. Place the butter slices on the potatoes.
- Put the lid on the pot and place in the oven. Cook for one hour.
- Remove the lid and turn the oven to 400°F. Cook for an additional 30 minutes.
- Turn on the broiler to 500°F and place the pan under the broiler for 3 to 5 minutes, until potatoes have a nice browned look.
