Brown the beef: Brown the meat in an oven-safe pan and remove it.
Sauté the vegetables: Add the vegetables to the same pan and cook in a little butter. Add more oil too if needed. Add the garlic and flour and then the red wine, beef stock or beef broth, meat, and seasonings. Grind in regular or seasoned salt and black pepper.
Add the potatoes on top: Arrange the thinly sliced potatoes on top and add butter on top of those.
Bake in the oven: Cover the pot and put it in the oven for an hour, then remove the lid and cook uncovered for another half an hour.
Broil to brown the topping: Broil for a few minutes until the potatoes are golden brown.

Substitutions and Variations

Gluten-free option: If you want a gluten-free version, use gluten-free flour for thickening and check your beef broth is free from gluten.
Chuck roast: For the beef I’d recommend stewing type cuts which do well with long, slow cooking. So consider chuck roast or beef leg roast, flank roast or skirt steak. Another idea is using ground beef.
Red wine: Use white wine or even rose wine if that’s all you have. Or use extra beef broth if you don’t want to add any wine.
Vegetables: Parsnips, turnips or rutabaga are other options. Or you could add mushrooms or even cabbage.
Potatoes: Sweeten the dish a little by using half regular potatoes and half sweet potatoes. Also, if you’re pressed for time you can use mashed potatoes instead of sliced.
Seasonings: Add some paprika or red pepper flakes if you like. A spoonful of tomato paste would add a complementary flavor.
Add cheese on top: You can add cheese on top before broiling, for another flavor.

Serving Suggestions

Do I have to layer the potatoes in a circle pattern?

This beef and potato one pot meal has a special topping. Because I made this in a round pot, I arranged the potatoes in circles, as you can see in the photo. There are two reasons for that – first because it looks pretty, and second because it’s easier to layer them that way in a round pan. If you’re using a square or rectangular casserole dish, you can use another pattern.

Do I have to broil the dish before serving?

You don’t have to, but it does give the potatoes a golden brown color, which looks really good, and this also makes them crispy. Keep an eye on them during cooking through – you don’t want them to burn!

Beef and Potato Bake – One Pot Meal

Ingredients 

  • 2 Pounds chuck roast
  • 1 Tablespoon vegetable oil
  • 1/2 Cup butter
  • 1 Teaspoon garlic
  • 6 yellow onions, peeled and diced
  • 4 carrots, peeled and cut into 1 inch pieces
  • 1 Tablespoon all purpose flour
  • 1 Cup red wine, or white if that's all you have
  • 2 Cups beef broth
  • 2 Sprigs thyme
  • 1 Sprig rosemary
  • 2 bay leaves
  • 2 Pounds potatoes, peeled and cut into ¼ inch slices
  • salt and black pepper, to taste

Instructions 

  • Preheat oven to 325°F. 
  • In a large oven safe pan, brown the meat with the oil. Don’t crowd the pan. This will need to be done in several batches.  
  • After the meat has browned, remove from the pan and add a little slice of butter, the onions and carrots and cook for 1 minute. 
  • Add the garlic and the flour and stir to combine, then add the red wine and stir well.
  • Add the meat and all the spices, along with some salt and pepper, and stir.  Add the broth, then lay the potato slices around the top. Place the butter slices on the potatoes. 
  • Put the lid on the pot and place in the oven. Cook for one hour. 
  • Remove the lid and turn the oven to 400°F. Cook for an additional 30 minutes. 
  • Turn on the broiler to 500°F and place the pan under the broiler for 3 to 5 minutes, until potatoes have a nice browned look. 
  • Serve and enjoy.
