  • 1 onion, chopped
  • 2 Tablespoons butter, salted
  • 1 Can biscuits, Grands
  • ¼ Cup all purpose flour
  • 32 Ounces chicken broth
  • 10½ Ounces condensed cream of celery soup
  • 1 Teaspoon garlic powder
  • ½ Teaspoon salt
  • ½ Teaspoon black pepper
  • ½ Teaspoon poultry seasoning
  • ¼ Teaspoon red pepper flakes
  • 1 Cup whole milk
  • ½ Cup parmesan cheese, shredded
  • 10 Ounces carrots, shredded or cut into matchsticks
  • 1 Tablespoon fresh parsley, chopped or 1 Teaspoon dried parsley
  • 1 rotisserie chicken, chopped or shredded
  • 4 Ounces spinach, fresh

Instructions 

  • Sauté the onions with the butter in a large pot or Dutch oven, and cook until golden.
  • While the onions cook, prepare the biscuit dough by rolling each piece out to be about ⅛-inch thick, then cut into 1-inch squares. Use the flour as needed if the dough is sticking to the counter or to itself. Set the dumplings aside.
  • When the onions are golden, add the chicken broth, cream of celery soup, and spices. Mix well, then add the milk and bring to a boil.
  • Once boiling, reduce the heat to a gentle boil.
  • Stir in the parmesan cheese.
  • Add the dumplings and stir frequently for a few minutes to ensure they don’t stick together.
  • Add the carrots and parsley and let the mixture cook for 5 minutes.
  • Add the chicken and cook for another 10 minutes.
  • Give the soup a taste and adjust the seasonings as needed.
  • Just before serving add the fresh spinach.
