Instant Pot Pasta Da Vinci (Cheesecake Factory Copycat)

This Instant Pot Pasta da Vinci is a rich, creamy Cheesecake Factory copycat dish with chicken and bold flavor—easy to make and seriously delicious!

Ingredients

  • 4 Tablespoons butter, unsalted
  • 4 Cloves garlic, minced
  • 1/2 shallot, minced
  • 1 red onion, diced 
  • 1 Cup baby bella mushrooms, sliced 

For the Sauce: 

Instructions 

  • Set Instant Pot to sauté mode. 
  • Add cubed chicken, olive oil, and the seasonings in the chicken section to a bowl and toss to coat. Add to the instant pot and sauté for 6 minutes.
  • Next, add the veggies ingredients to the instant pot and sauté for 4 minutes, or until onions are translucent.
  • Turn off the Instant Pot and remove the contents. Set the chicken mixture aside in a large mixing bowl. 
  • Pour chicken broth into the Instant Pot and deglaze the bottom of the pan. Then, pour in the Madeira wine and noodles. Seal and set to manual high pressure.
  • Cook for 3 minutes, then wait 5 minutes and quick release remaining steam. Add noodles to the bowl with the chicken.
  • Add olive oil to the instant pot and set to sauté. Next, add the minced garlic and stir for 30 seconds. Add 4 Tablespoons butter and melt, then whisk in the flour.  
  • Pour in the remaining sauce ingredients and whisk. Cook until thickened, about 5 minutes. Turn off the Instant Pot.
  • Add the noodles, chicken, and veggies back to the instant pot and stir until coated.  
  • Garnish with curly parsley and serve right away.

    Looks nice, and I’m In the process of cooking but your recipe is confusing.

    2 cups of chicken stock in the pasta section of ingredients and 1/2 cup of broth in the sauce section. Which am I deglazing with? The recipe says to deglaze with the broth… isn’t that for the sauce?

    No mention of the 1/2 tsp Italian seasoning and 1/4 tsp pepper flakes in the recipe text.

    1. Hi Andrew, sorry if the text is confusing, I will take a look and tweak it to make it clearer. When I made this dish, I deglazed with the chicken stock and used the broth in the sauce. Now chicken stock is richer in flavor and mouth-feel because it’s made with the chicken bones rather than the chicken meat but I expect they’re interchangeable in this recipe (I just wanted to keep it close to the Cheesecake Factory version). As for the Italian seasoning and pepper flakes they’re included in step 7 (add the remaining sauce ingredients). I hope your dish came out well though!

  3. other than the instant pot is there another way to cook this I don’t have an instant pot.

    1. Yes. You can use a regular pot on the stove to sauté the chicken and vegetables. Remove the contents of the pan to a bowl. Put the chicken broth in the pot with the madeira wine and noodles, then cook until the noodles are tender and add that mixture to the bowl. After that, you can whisk the remaining ingredients together in the pot until thick, then add the chicken and noodle mixture back in, and cook until coated. I wouldn’t change any of the liquid quantities because there’s no evaporation from the Instant Pot. However, you’ll find the dish takes a little longer to cook as you aren’t pressure cooking. Hope it comes out delicious!
