Canned biscuits: Canned biscuit dough makes your cherry pie crust and this dough cooks to a beautiful golden brown.
Cherry pie filling: Another shortcut. Canned pie filling is definitely easier than making your own and the sweet cherries are perfect for pie making.
Marshmallows: These add a sweet touch. You can use large ones cut in half or mini ones if that’s what you have.
Chocolate chips: Semisweet, milk or white chocolate all work, or you might prefer to use a mixture.
Non stick cooking spray: To stop the pie crusts sticking to the pie iron.

How to Make Campfire Cherry Pie

Prepare the campfire: This is, as you’d expect, the first thing to do. Get it nice and hot! If you’re cooking the main course on the campfire too (perhaps some tasty shrimp scampi hobo pies or Philly cheesesteak packs) then it will already be hot. Assemble the cherry pudgy pies: Flatten the biscuits so you have 10 of them. Lay 5 of them down, top with cherry pie filling, marshmallow and chocolate chips, and add the remaining ones on top, sealing with your fingers or the tines of a fork.
Cook them: Spray your pie iron with cooking spray and put a pie in there. Close pie iron and put it over the coals. Cook for 10 minutes or until done, then serve hot. Cook the remaining pies.

Gluten-free option: If you want a gluten-free version, you can use your favorite gluten-free dough or gluten-free bread slices instead, to make your cherry mountain pies.

How to Store Cherry Pudgy Pie

Store: These are best eaten as soon as they’re made but if you have leftovers, wrap tightly in foil and eat within a day or two.
Reheat: Heat them back up over the campfire or, if you’re back home, in the microwave.

Cook several at once: If you’re using a small pie iron you will need to cook these individually. But with a larger one (this is my fave!) you can cook several at one time.
Campfire tips: Make sure the campfire is hot before you start cooking these. It’s best to put the pie iron over the coals and not directly in the flames.
Experiment with these: What about including some of your favorite add-ins? Chopped nuts are nice in there or you could try butterscotch chips or mix some finely chopped fresh pineapple or apple into the pie filling. A little cinnamon sugar on the outside of the pies is delicious too.

Should these be served with whipped cream or ice cream?

That’s up to you. If you’re roughing it and don’t have access to a refrigerator or freezer, you can enjoy these as they are. If you have a fully fitted RV, you can bring whatever chilled or frozen items you like.

Can you use the same pie iron for other dishes?

Yes. If you’re making grilled cheese, mountain pie or veggies with pizza sauce in your pie iron for the main course and then going to make cherry pies for dessert, just wipe the pie iron clean in between the different courses. If you camp a lot or there’s a crowd, you might like to invest in several pie irons.

Would bread slices work instead of biscuit dough?

Well, biscuit dough is the sturdier option but if you want to try buttered white bread or your favorite gluten-free loaf, you can use that instead. Just take care the cherry pie desserts don’t fall apart. Maybe don’t use one slice of bread on either side – try two slices instead for extra strength to hold in all that lovely filling and put the slices butter side outwards so there’s less chance of your mountain pies sticking to the cast iron.

Pie Iron Cherry Pie

Canned biscuits, cherry pie filling, marshmallows, and chocolate chips come together to make this wonderful pie iron cherry pie recipe.

Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients 

Instructions 

  • Get the campfire going.
  • Flatten 2 biscuits using your fingers or by rolling the cherry pie filling can over them.
  • Lay one circle down and add 1 tablespoon of cherry pie filling into the center.
  • Cut 1 marshmallow in half and place on top of the cherry pie filling. Next sprinkle some chocolate chips on top.
  • Lay the other flattened biscuit on top and using the tines of a fork or your fingers, press the edges together all the way around.
  • Turn it over and repeat, sealing the pie edge.
  • Spray both sides of the pie iron with cooking spray.
  • Gently place cherry pie in the pie iron. If a larger pie iron is used, more than one can be added at a time.
  • Close lid and place on the fire over coals, not directly in the flames.
  • Cook for approximately 10 minutes, turning every few minutes. Check often as time will vary depending on where the pie iron is placed in the fire.
