Why did my cheese go grainy?

Cheese can break if the soup is boiling hard. Lower the heat and stir in the cheese gently and gradually.

Can I cook this on high instead of low?

Sure. Cooking on high will take 3 to 4 hours, but I find cooking on low gives a slightly richer flavor. Another idea is the Instant Pot, in which case just follow the directions that came with yours for the slow cook setting.

  • 1 Pound ground beef
  • 4 Cups potatoes, peeled and diced
  • 1 onion, medium, diced
  • 1 Cup carrots, peeled and sliced
  • 1 Cup celery, diced
  • 1 Cup corn, fresh, canned or frozen
  • 3 Cloves garlic, minced
  • 1 Tablespoon Worcestershire sauce
  • 1 Tablespoon Italian seasoning
  • 1 Teaspoon salt
  • 1 Teaspoon black pepper
  • 5 Cups beef broth
  • 1 Cup heavy cream
  • 2 Tablespoons all-purpose flour
  • 2 Cups cheddar cheese, shredded

Instructions 

Brown the Beef

  • Cover and cook on low until the potatoes are tender and the flavors have developed.
  • Whisk the flour into the heavy cream until smooth, then stir it into the slow cooker during the last 30 minutes of cooking.
  • Stir in the cheddar cheese until melted and creamy.

  • Let the soup cool for 5 to 10 minutes before serving.
