Dairy Free Butter Chicken Ingredients
I used chicken breasts to make this slow cooker butter chicken, but thighs would also be good if you prefer them. Some people like to use thighs for their richer flavour, but really either would work just fine here.
For the butter chicken sauce, you need garlic, shallots, garam masala, red pepper flakes, red curry paste, ginger, coconut milk, and more. All these ingredients blend together beautifully to make the best sauce.
I made a tasty gluten free no yeast naan bread to go with this easy slow cooker recipe, and it’s great for mopping up the juices. If you prefer steamed or boiled rice, that’s also good. You could even make mashed potatoes for an East meet West style curry dish.
If you’re in a rush you might want to buy some readymade naan bread and have that with the curry. It’s totally down to personal preference.
How to Make this Chicken Curry Recipe
To make this butter chicken with cauliflower rice, you need to chop the chicken and add lemon juice as well as red pepper flakes. Grind in some salt and pepper. While the chicken marinates, you can go ahead and make the sauce.
Melt coconut oil and add shallot, ginger and garlic. Use fresh if possible – it tastes so much nicer. This mixture can then go into a food processor with garam masala, curry paste, and tomatoes.

If you are making your own naan bread, you can start this an hour or so before the chicken is done. Next you can start preparing the cauliflower rice so it is ready when the chicken is. Steam-able bags are a great time-saving option here if you are short on time.

Slow Cooker Dairy Free Butter Chicken with Cauliflower Rice
Ingredients
- 4 chicken Breasts, boneless skinless
- 1 lemon , juiced
- 1 bunch cilantro leaves, for garnish
- 1 head cauliflower , or a bag of steamable frozen cauliflower rice
Butter Chicken Sauce
- 1 Tbsp. coconut oil
- 1 Tbsp. ginger root
- 4 cloves garlic
- 2 shallots
- 1/2 Tsp. red pepper flakes
- 3 Tsp. garam masala
- 1/4 Tsp. ground black pepper
- 1 Tbsp. red curry , paste
- 1 Can roasted tomatoes
- 4 Tbsp. tomato paste
- 1 Can coconut milk
Instructions
- Cut chicken into cubes and place into a large mixing bowl. Juice the lemon into the bowl. In a small ramekin, mix red pepper flakes, salt, and pepper. Add to the bowl and toss chicken to coat. Let marinate for 15 minutes.
- Prepare the butter chicken sauce. Heat a skillet over medium heat. Add coconut oil to the skillet and melt. Once melted, add chopped ginger root, crushed garlic, and minced shallot. Saute for 3 minutes and remove from heat. Add ginger, garlic, and shallot to a food processor. Then, add garam masala, black pepper, sea salt, red curry paste, roasted diced tomatoes (undrained), and tomato paste. Blend until smooth.
- Add chicken to the slow cooker. Pour sauce on top and stir to coat. Cover, and cook on high for 4 hours, or on low for 6 hours.
- After the chicken has finished cooking, stir in the coconut milk. Cover and let simmer on low for 15 minutes.
- Prepare cauliflower rice according to the package. I use the frozen steamable bags for this step to save time, but feel free to make your own. To do this, simply grate a head of cauliflower and add to a skillet with 1 tbsp of coconut oil. Saute for 5 minutes.
- Serve butter chicken over cauliflower rice with naan bread. Garnish with fresh cilantro and enjoy
