What could be better than a stuffed chocolate chip cookie? These chocolate chip Reese’s peanut butter cup stuffed cookies are made with mini peanut butter cups are! This is a nice recipe for using leftover Halloween treats. If you do have any left, of course! Read on for all the details to make these cookies with Reese’s in the middle.
I love these cookies with Reese’s in the middle, served with a glass of milk. They are rich in flavour, perfectly chewy and it’s impossible to only eat one!
Ingredients for these Chocolate Chip Reese’s Peanut Butter Cup Stuffed Cookies
These chocolate chip Reese’s peanut butter cup stuffed cookies don’t require a whole lot of ingredients. In fact no ingredient should come as a surprise. You will need flour, butter, sugar, baking soda, salt, vanilla, and eggs. These are made with mini peanut butter cups so you’ll need those as well.
I used semisweet chocolate chips so you can use the same or you could sub them for white chocolate chips or another favourite. If you don’t have Reese’s mini peanut butter cups you could use the regular size ones and just cut them into pieces. It’s simpler with the mini variety but since you are using leftover Halloween treats, it just depends what you have!
What is the Baking Soda for?
You might be curious about using baking soda. When added to dough, this ingredient releases carbon dioxide to make the cookie soft and fluffy. Recipes containing something acidic like vinegar, citrus or sour cream typically call for this as a leavening agent.
Using baking soda means you should work quickly and bake the cookies as soon as you’ve combined the ingredients. Otherwise the cookies will lose the carbon dioxide and come out flat.
Can I Use Baking Powder Instead?
Baking soda tends to give a stronger raising reaction than baking powder. However, you can sub that instead. If you are using baking powder then you will need to triple the amount used. Also, omit the salt from the recipe.
The flavour of the cookies won’t be exactly the same. You might be able to detect acidic or salty flavours in the finished cookies, so bear that in mind before swapping the ingredients.
How to Make a Stuffed Chocolate Chip Cookie
The first thing to do is combine the baking soda with the flour. Cream the butter with the sugar then add the eggs one by one. Next add the vanilla, flour mixture and the chocolate chips.
Now you can drop the cookie dough by spoonfuls on to a baking sheet. Add a Reese’s cup to each then seal the dough over the top to enclose it. Now all you have to do is bake them and enjoy how your kitchen smells like a bakery!
How to Serve Chocolate Chip Reese’s Peanut Butter Cup Stuffed Cookies
These cookies with Reese’s in the middle go with everything. They pair just as well with an espresso or iced tea as they do with a nice cold glass of milk.
You can crumble them to sprinkle over ice cream or add a couple to a box lunch. This recipe makes 24 cookies so you will have plenty of opportunity to see what you like them with.
Why this Stuffed Chocolate Chip Cookie Recipe is So Good
I love these cookies because they’re so unusual. You can pleasantly surprise people with these.
Because the Reese’s is hidden they won’t know about it until they bite into the cookie. This is a wonderful recipe for using leftover Halloween treats. If you have other candies left from Halloween then consider using those too.
Anything with chocolate would be great in this recipe. It’s great made with mini peanut butter cups but would be good whichever chocolate you like or happen to have. I love to sprinkle a few extra chocolate chips on the cookies before baking. To me there is no such thing as ‘too much chocolate!’
