Ingredients 

  • 2 baking potatoes, cleaned not peeled (I used Russet)
  • 1 Tablespoon oil
  • ¼ Cup butter, melted
  • 1 Tablespoon onion soup mix
  • ½ Teaspoon salt
  • ¼ Teaspoon black pepper, freshly ground
  • ½ Cup milk
  • Cup sour cream
  • Cup crispy fried onions, plus more for topping
  • 1 Cup Colby cheese, shredded

Instructions 

  • Preheat the air fryer at 400°F for 5 minutes.
  • Clean and pat the potatoes dry. Pierce each one a few times with a fork.
  • Coat the potatoes with a thin layer of oil. You can also add a sprinkle of salt or garlic powder if liked.
  • Place the potatoes in the air fryer and air fry for 45 to 50 minutes at 400°F. The potatoes are cooked when the inside temperature is between 195 and 205°F.
  • Take them out of the air fryer and allow them to cool, for 15 to 20 minutes or until you can handle them.
  • Cut off the ⅓ top part of the potatoes, lengthwise.
  • Scoop all the potato flesh from inside without breaking the skin.
  • Put the scooped potato flesh in a mixing bowl.
  • Add the melted butter, onion soup mix, salt and pepper. Mix well with a hand mixer, potato masher or fork.
  • Add the milk and sour cream. Mix until all ingredients are combined.
  • Add the French fried onions and ½ cup shredded Colby cheese. Mix well.
  • Scoop the potato mixture back into the skins.
  • Sprinkle the remaining shredded cheese on top.
  • Air fry at 325°F for 10 minutes or until the cheese is golden and melted.
  • Cool for a few minutes before serving.
