Mozzarella balls: These are easy to find at the grocery store. They’re sometimes labeled as mozzarella pearls. Get the plain ones of course, as you will be adding your own marinade. Bocconcini and ciliegine mozzarella are great varieties to choose.
Olive oil: I recommend Italian extra virgin olive oil (for obvious reasons!)
Fresh herbs: Fresh basil and fresh parsley are so good in the marinade.
Balsamic vinegar: Adds a tasty tang and a hint of sweetness.
Dried oregano: Another herb flavor.
Sun dried tomatoes: For sweetness and added flavor.
Fresh garlic cloves: Always good in savory recipes, but omit it if you prefer.

How to Make Marinated Mozzarella

Drain the cheese: Drain off and discard the liquid the cheese is in.
Prepare the marinade: Combine the rest of the ingredients in a bowl until well mixed.
Marinate the mozzarella balls: Toss the mozzarella balls in the marinade, then either cover the bowl with plastic wrap or put the cheese and marinade in a jar with a tight-fitting lid. Refrigerate overnight or for at least a couple of hours, and then bring the marinated mozzarella to room temperature and serve.

You could, but the full-fat kind has a richer flavor.

Do you have to use extra virgin olive oil or can you use regular olive oil?

Ingredients

  • Drain the mozzarella balls from their liquid and discard the liquid.
  • Combine the olive oil, garlic, sun-dried tomatoes, basil, parsley, oregano, salt and black pepper, and balsamic vinegar in a medium bowl, mixing well until everything is combined well.
  • Next, add the drained mozzarella balls to the marinade, and toss gently to ensure evenly coat with the mixture.
  • Use plastic wrap to cover the bowl or transfer the mozzarella and marinade into a jar that has a tight-fitting lid.
  • Refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
  • Bring the marinated mozzarella balls to room temperature before serving with crackers and/or crusty bread, or as part of your charcuterie board or antipasto platter.
