Ingredients for Dark Chocolate Raspberry Truffles

To make this raspberry truffle recipe, you will need white chocolate chips, dark chocolate chips, heavy cream, and freeze dried raspberries or dried raspberry powder (here).

If you’re using whole freeze dried raspberries then just use a food processor to pulverize them into raspberry powder for that perfect raspberry flavor. You want a fine powder for the truffle filling.

How to Make Raspberry Truffles

Make the filling:  Microwave the white chocolate chips with the heavy cream and then add the raspberry powder and mix well before refrigerating for 10 to 15 minutes.
Shape the truffles: Roll the refrigerated raspberry mixture into balls or use a cookie scoop (small one here) and arrange on a parchment lined baking sheet.
Coat them in melted dark chocolate: Melt the dark chocolate in the microwave then coat the raspberry truffles in it, putting them back on the parchment lined baking sheet to set.
Chill the raspberry powder truffles: Refrigerate them for about 10 minutes or until fully set.
Add the remaining melted chocolate: Put the rest of the melted chocolate in a piping bag and drizzle over the truffles, then chill for at least 10 minutes before serving, preferably on parchment paper so they don’t stick to anything while setting.

Substitutions and Variations

Swap freeze dried strawberries for the raspberries if that’s your berry of choice. You can also sub coconut cream for the heavy cream if you want to make vegan truffles.

What is freeze dried raspberry powder?

This powder, which is made from freeze dried raspberries, is just that – powdered dried raspberries. You can buy raspberry powder easily online.

Can you use milk chocolate instead of dark?

You can use any kind of chocolate you prefer. The reason dark chocolate is popular is because its slight bitterness (or at least its lack of overt sweetness) contrasts beautifully with the sweetness of the berries. But go ahead and use any kind of chocolate you want, and if you want to swap the white chocolate chips for another kind go ahead and make these melted chocolate raspberry truffles your own!

What about fresh raspberries, can you use those?

Maybe in some candy recipes but not this one. Raspberries contain too much moisture in their fresh state to use here.

Can you use a double boiler instead of a microwave to melt the chocolate chips?

Yes, put the chocolate and cream in a bowl over a pan of water and bring the water to a simmer, then wait until the chocolate melts into the cream, not letting the cream mixture reach a simmer.

Raspberry Truffles Recipe

This easy raspberry truffles recipe is pure indulgence. It's the perfect treat for special occasions like Valentine's Day and Christmas.

Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 15

Ingredients 

  • 11 Ounces white chocolate chips
  • 1/4 Cup heavy cream
  • 4 Tablespoons dried raspberry powder
  • 8 Ounces dark chocolate chips

Instructions 

  • In a microwave-safe bowl add the white chocolate chips and heavy cream. Heat up for 15-second increments. Mix in between each heating.
  • Add the raspberry powder to the melted chocolate. Mix until combined.
  • Place the bowl in the fridge for 10 to 15 minutes or until the filling is stiff. You do not want it to get hard, but stiff enough that you can roll it into balls.
  • Use a small cookie scoop to scoop out the portions. With clean hands roll the filling until you have perfectly round balls.
  • Place the truffles on a parchment paper-lined baking sheet.
  • In a medium-sized bowl add the dark chocolate chips. Microwave for 15-second increments until melted. Mix in between.
  • Place the truffle one at a time into the melted chocolate. With a fork roll the truffle in the chocolate until fully coated. Allow as much of the chocolate to drip off. With the truffle on the fork scrape the bottom of the fork on the side of the bowl to remove any excess chocolate.
  • Place the truffles back onto the parchment paper.
  • Place the coated truffles in the fridge for 10 minutes or until the chocolate is set.
  • Remove the truffles from the fridge.
  • Place the remainder of the chocolate into a Ziplock back or piping bag.
  • Drizzle the chocolate on top.
  • Sprinkle the raspberry powder onto the drizzled chocolate.
  • Place the truffles in the fridge for up to 10 minutes.
