  • 2 Pounds carrots, whole, peeled, diagonally cut into 3-inch pieces
  • 4 Tablespoons unsalted butter, melted
  • 4 Cloves garlic, minced
  • ¼ Cup parmesan cheese, shredded
  • 1 Teaspoon rosemary, dried
  • ½ Teaspoon kosher salt
  • ½ Teaspoon black pepper, freshly cracked
  • parsley, freshly chopped, optional

Instructions 

  • Preheat oven to 425 degrees F. Grease a large-rimmed baking sheet with nonstick cooking spray or line it with foil.
