Slow Cooker Greek Lemon Soup Recipe
Greek Lemon Chicken Soup – Avgolemono
- 4 Chicken breasts boneless, skinless
- 6 Cups chicken broth
- 1 Tsp. sea salt
- 1 Tsp. ground black pepper
- 2 Tsp. tumeric
- 1 white onion sliced
- 4 Cloves garlic minced
- 2 carrots peeled and diced
- 16 Oz. pasta I used Ditallini
- 3 Cups spinach
- 2 lemons juiced
- 3 Tbsp. dill fresh
- Place chicken in the bottom of the slow cooker.
- Add sliced onion, carrots, garlic, salt, pepper, turmeric, and juice from 1 lemon into the slow cooker.
- Pour in the chicken broth. Cover, and cook on high for 2 hours.
- Shred the chicken and return it to the crock pot.
- Add Ditallini, spinach, juice from 1 lemon, and the dill.
- Stir and cover. Cook for 30 minutes. Serve warm and garnish with dill and lemon slices.
