Avgolemono is pronounced ‘ah-voh-le-mo-no’ with the ‘g’ being silent. This word refers to the combination of lemon, eggs and broth. This mixture is used as a sauce for Greek dishes like dolmades (stuffed grape leaves), roasted chicken or vegetable dishes. It is also added to soups to thicken them up. This is a version without the egg and takes just as good!

Why You’ll Love It

  • Comforting: Chicken soup is a comforting, nostalgic dish. Perhaps your mother or grandmother used to fix it for you when you were feeling a little under the weather. Most households have their own version of chicken soup or chicken noodle soup to lift the spirits.
  • Easy: Using a crockpot makes this an easy recipe, as you just have to add things and let them cook.
  • Authentic: This is a typical Greek soup with freshly squeezed lemon juice, chicken stock and more. Omitting the egg doesn’t detract from the amazingly rich flavour at all.

In this recipe for chicken avgolemono soup, we are using fresh chicken and chicken broth. Luckily we have some shortcuts these days, such as readymade broth, to cut down on prep time! We are also skipping the egg in this version of the traditional Greek soup. Oh, and if you have leftover rotisserie chicken, that works great.

Eggless Avgolemono Soup Ingredients

Along with the chicken, broth and lemon, this authentic Greek soup is flavoured with turmeric and dill weed. In addition, onion, garlic, carrots, and spinach add robust, fresh flavours. Then I like to add pasta to make it hearty.

I like ditalini pasta in this. Ditalini translates as ‘little thimbles’. It’s like a very short type of macaroni, and is sometimes called salad macaroni. Short types of pasta date back to the industrial age in Italy. Today this pasta is mass-produced of course.

In Greek, ditalini is known as ‘koftó makaronaki’. The reason I like to use ditalini is a simple one – it fits well on a spoon when eating soup! That’s a good rule of thumb for any delicious soup with pasta or noodles actually. Always use tiny pasta shapes!

The great thing with this is you are making it in the crockpot, so you can just ignore it until it’s ready! That frees up your time to get the main dish ready. Perhaps you want to continue the meal in the same vein. Consider lamb shanks braised in Greek red wine with lemon potatoes and Greek salad for the next course. Then finish with some seasonal fresh fruit.

What’s the history of lemon juice soup?

In Greece, the yia-yias (grandmothers) would make this authentic Greek soup the old-fashioned way. This means they would take hours preparing this Greek lemon chicken soup.

The grandmothers would make homemade chicken broth using a whole bird. After that they would shred the chicken by hand and continue with the soup.

    Recipe MAY be good….
but the website prevents ANY printing of/reproducing of the recipe EVEN AFTER giving the website one’s email info.
So… you’re supposed to cook leaving your laptop open? Ridiculous.
…AND the website is absolutely swamped with spam.

    1. Sorry you’re having an issue with printing. I just printed out this one as a test and it worked fine for me. Perhaps you can try again (just click “print” on the recipe card near the bottom to see the print preview and click “OK”). I will take another look too, in case it’s something else. The whole blog was overhauled and redesigned recently and there might be some kind of bug. But please do try the recipe, it really is good!! 🙂
