These air fryer twice baked breakfast potatoes are incredibly good. It’s an easy air fryer breakfast recipe which is simple to prepare. If you have leftover baked potatoes, you might like to consider baked potatoes for breakfast and you won’t regret it! These breakfast stuffed potatoes are made with egg, pepper, tomatoes, spinach, ham and cheese.
Of course potatoes are a popular breakfast item – hash browns anyone? But breakfast stuffed potatoes are also a great way to start the day.

Along with the potatoes (or leftover baked potatoes) you will need eggs, pepper, tomatoes, spinach, ham and cheese, plus some heavy cream. Feel free to change up the ingredients you’re using for the filling.
Optional Ingredients and Variations
You can consider other veggies such as mushrooms or zucchini. Any kind of shredded or grated cheese works. Gruyere, fontina and Monterey Jack are all nice melting cheeses, as is mozzarella. I like to use sharp cheddar for its rich flavour.
Add a pinch of mixed herbs for extra flavour or minced chilli peppers for heat.
I like to sprinkle some dried mixed herbs on top of the cheese before I cook these. You could use parsley, cilantro or basil, either fresh or dried. Although you could get the same flavour by adding the herbs to the filling, sprinkling them on top looks prettier!
I bet this recipe would also be great with crumbled cooked bacon instead of the ham. I’m sure you can think up even more variations too. If you are looking for sides, these air fryer sausage patties would be tasty.

Making Twice Baked Breakfast Potatoes
It’s easy to make baked potatoes for breakfast. You can either cook the potatoes in the air fryer just before the recipe or use leftover ones. You can also bake them the evening before so you can enjoy your easy air fryer breakfast recipe sooner!
These baked potatoes for breakfast use the same method as most other stuffed potato recipes. You will scoop out the flesh leaving the outsides intact. For the best result when doing this, it’s best to leave at least ¼-inch of potato flesh on the skin. That way your breakfast potatoes air fryer dish will come out perfect!
If you remove too much of the flesh, you risk cutting through or tearing the skin. Although this won’t be too much of an issue, the air fryer twice baked breakfast potatoes just look prettier if that doesn’t happen.
Mix the eggs, pepper, tomatoes, spinach, ham and cheese, or your preferred ingredients with the potato flesh. Mix in the cream and seasonings also. You can then spoon this mixture back into the potatoes and top with cheese. Pop them in the air fryer and you can enjoy these breakfast stuffed potatoes in just 15 minutes.
I find this easy air fryer breakfast recipe pretty filling and don’t tend to have anything else with them. But if you want to pair your air fryer twice baked breakfast potatoes with a cup of fresh chopped fruit, some bacon (if you aren’t adding this or ham to the filling) or another side, go ahead.

Making Breakfast Stuffed Potatoes Ahead
I’d recommend either baking the potatoes ahead of time or using leftover baked potatoes. If you really want to save time in the morning, you can stuff the potatoes the evening before too. Air fryer breakfast potatoes are great for feeding a crowd.
If you prepare the filling and keep it separate from the potatoes, you might need to warm it up a little so it goes in smoothly. Make these a couple of days in advance if you want.
Top Tips
Along with tweaking the eggs, pepper, tomatoes, spinach, ham and cheese (if you want) there are some other tips to consider. I already mentioned leaving ¼-inch of potato flesh next to the skin but you can still accidentally get a hole or tear in there.
If this happens, don’t worry. You can just add some cheese or the mashed potatoes mixture over the hole. The filling won’t fall out – it’s too thick.
You can use a spoon to remove the potato flesh or try a melon baller if you have one.

Air Fryer Twice Baked Breakfast Potatoes
Ingredients
- 4 potatoes, russet
- 1 Tablespoon extra virgin olive oil
- 1 Pinch salt
- 1 Pinch black pepper
- 1 bell pepper, green, diced
- 2 tomatoes, Roma, diced
- 1 Cup spinach, chopped
- 1/2 Cup ham, diced
- 2 Cup cheddar cheese, shredded
- 1 Teaspoon salt
- 1/2 Teaspoon black pepper, coarse
- 4 eggs
- 1/4 Cup heavy cream
Instructions
- Preheat the air fryer to 400 degrees F. Pierce potatoes with a fork all over. Brush with extra-virgin olive oil and season with a pinch of salt and pepper. Wrap in foil and place into the air fryer. Cook for 40 minutes.
- Remove potatoes from the air fryer and allow to cool for 15 minutes. Slice potatoes in half lengthwise and use a spoon to remove the inside into a large mixing bowl leaving ¼” around the edges and bottom.
- Add diced green bell pepper, tomatoes, spinach, ham, one cup of shredded cheddar cheese, salt, pepper, eggs, and cream to the bowl with the potato filling. Mix well to combine.
- Preheat the air fryer to 375 degrees F for five minutes
- Scoop the mixture back into the potatoes and top with cheese.
- Place potatoes back into the air fryer basket and cook for 15 minutes.
