How to Make Devil’s Food Chocolate Cookies

Preheat oven: Preheat the oven.
Melt the semi sweet chocolate chips: Melt them in the microwave.
Combine the ingredients: Stir the flour with the cocoa powder, baking soda and salt in a medium bowl, and then mix in the chocolate chips and chocolate chunks. Cream the butter and sugar, add the eggs and vanilla, and blend in the melted semi sweet chocolate chips in a large bowl, using an electric mixer. Combine this mixture with the dry mixture in the large mixing bowl to make the cookie dough.
Scoop the dough into cookies: Shape dough into balls with a cookie scoop and press them on to prepared baking sheets lined with parchment paper or silicon mats.
Bake the devil’s food cookies: Bake in a preheated oven for about 10 minutes or until done, then cool completely.

Is vanilla paste or vanilla extract best for this recipe?

Both will work, so just use whichever you have. Vanilla paste and vanilla extract are very similar to each other in flavor.

What’s the best way to keep them soft and fresh?

Cool them completely on cooling racks so the excess moisture can evaporate as they cool. It’s important to keep devil’s food cookies in an airtight container. Something I like to do is add a slice of bread to the container too – it will soak up any excess moisture and prolong the freshness of your cookies.

Devil’s Food Cookies

Ingredients 

Instructions 

  • Preheat the oven to 350 degrees F.
  • Line a cookie sheet with a silicone mat or parchment paper. Set aside.
  • In a microwave proof bowl, melt the semi-sweet chocolate chips. Set aside.
  • In a mixing bowl, whisk the flour, cocoa powder, baking soda, and salt.
  • Add the white chocolate chips, mini chocolate chips and chocolate chunks. Mix until the chocolates are coated with the flour mixture. Set aside.
  • In a large mixing bowl, add the butter, light brown sugar and granulated sugar. Mix until all ingredients are combined. I used a hand mixer, but you can also use a Danish dough whisk or a mixing spoon.
  • Add the eggs, one at a time, mixing well in between each addition.
  • Add the vanilla paste with the last egg. Mix well.
  • Add the melted chocolate chips and mix until both mixture are combined.
  • Blend the dry mixture into the wet mixture. Mix until all ingredients are combined, and you don’t see dry flour.
  • Use a medium-sized cookie scoop, 1½ tablespoons, to scoop the dough into balls.
  • Slightly press down with your fingers or the back of a spoon.
  • Bake in the preheated oven for 9 to 11 minutes or until the edges are set and the center is soft.
  • Cool on the cookie sheet for 1 or 2 minutes and then transfer to a cooling rack.
