Store:  Make sure the frosting has set before storing the cookies, and then keep them in an airtight container with waxed or parchment paper between each layer. They will stay fresh for up to a week.
Freeze baked: You can freeze cooked Lofthouse cookies for up to 3 months. Freeze on a baking sheet for half an hour and then transfer cookies into an airtight container or freezer-safe Ziploc bag.
Freeze unbaked: You can freeze the cutout uncut cookies too in the same way. Thaw for half an hour at room temperature and then proceed with the recipe.

Do these taste the same as the Lofthouse cookies from the store?

They are very similar but these aren’t quite as fluffy. Lofthouse actually uses margarine in place of unsalted butter. If you want to do that, make sure you choose margarine that’s at least 80% vegetable oil. A little butter extract is another optional ingredient, and some recipes use cake flour or sour cream. Recipes do vary but this one is very tasty.

Can you make different flavors of these?

Yes, you might like to try orange extract or almond extract in place of the vanilla for a different flavor, or mix and match different extracts in the dough and in the frosting.

Lofthouse Cookies Recipe

This copycat Lofthouse cookie recipe is based on the original ingredients. They are soft, cakey and topped in sweet pink buttercream frosting.

Ingredients

Instructions 

  • Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  • Using a hand mixer, or stand mixer, cream butter and sugar together until light and fluffy. Add in vanilla and egg, and mix until well combined.
  • Take out two medium-sized size mixing bowls, and using a sifter, sift together flour, baking soda, baking powder, salt, and cornstarch, alternating between the two bowls until the flour mixture has been sifted 3 to 4 times. The flour should have a powder texture.
  • Gradually add the dry ingredients into the wet ingredients until blended. Scrape down the sides of the bowl as needed.
  • Roll out the dough to ¼ inch thickness. Use a circular cookie cutter to cut out each cookie.
  • Place cookies on a prepared baking sheet and leave 2 inches between each cookie.
  • Bake for 7 to 9 minutes, until edges are lightly golden
  • Remove from the oven and set aside to cool.
  • To make the frosting, beat the butter and powdered sugar until light and fluffy
  • Beat in the vanilla, milk, corn syrup, and food coloring until the frosting is smooth and spreadable.
  • Once cookies have cooled completely, spread frosting onto each cookie and then top with sprinkles.
