Oranges: Fresh oranges are best for making this orange recipe. If you sub bottled juice you won’t get the same fresh flavor in the bars.
Dark chocolate: Such a classic flavor pairing with the orange. If you don’t like dark chocolate, you can use another type in its place.
All-purpose flour: This is the main ingredient in the shortbread crust. You can use gluten free flour if you prefer.
Sugar: You need white sugar and powdered sugar for the crust, and white sugar for the orange citrus glaze.
Cornstarch: This helps to get the right consistency in the filling.

How to Make Orange Bars

Make the crust: Grate some orange zest with a microplane and combine with the flour and both kinds of flour, before grating in some cold butter and mixing to make a dough.
Bake the crust: Press the dough into a parchment paper lined baking dish and bake in a preheated oven for half an hour or until the crust is light golden brown.
Make the orange curd: Whisk the orange juice with the eggs, sugar, flour, cornstarch, and orange zest in a pan for about a minute or until the mixture thickens. Strain into a bowl and whisk in the butter.
Add the orange filling to the crust: Pour the orange mixture into the hot crust, then bake for 30 minutes or until the curd filling is set.
The finishing touches: Cool to room temperature and refrigerate for an hour or until chilled. Cut into bars and add shaved chocolate curls on top.

How to Store Orange Bars

Store: Keep the orange dream bars at room temperature. They will be fine out of the refrigerator for a day if they’re well wrapped because of the acidic citrus content. Any longer than a day though, and they need to be refrigerated. These bars will keep for several days.
Freeze: Freeze them wrapped tightly in plastic wrap, either two layers of that or one of plastic wrap and then a layer of foil.
Thaw: Thaw them overnight in the fridge or, for quicker defrosting, on the countertop.

Perfect squares: To get precise squares with your orange bars, you can use the overlapping edges of the parchment paper to measure and mark 3-inch squares. If you prefer, you can cut rectangles or freestyle squares.
Cooking time: Because ovens do vary, you might find your bars aren’t cooked through. If that happens, just pop them back in the oven for another few minutes and check again. Once they aren’t jiggling in the middle, they’re done.
Get all the juice out: If you want to get as much juice out of each orange as you can, you can either roll them hard on the countertop, pressing down, or give them 10 seconds in the microwave.

Can you use bottled orange juice to make orange bars?

Although you could if you wanted to, the fact that orange bars have fresh oranges as the main flavor means you will get a much better result if you use fresh. It’s worth it, to ensure your orange bars come out wonderful!

Do you need a food processor to make these?

No you don’t, although you can make the crust in a food processor if you wish. You can also use an electric mixer or some elbow grease!

How can you tell when the orange bars are fully cooked?

The crust will be golden brown and the filling won’t jiggle in the middle any more.

How do you make the chocolate curls for the garnish?

This is actually really easy! Let the chocolate bar come to warm room temperature (about 80 degrees F is good) and use a vegetable peeler on the side of the chocolate bar. If it’s too cold the curls will break. If not, they should come out perfect.

What is a microplane?

It’s a long, thin grater which is ideal for grating ingredients very finely. Whether you need citrus zest, ground fresh nutmeg or something else, a microplane is a handy kitchen tool (I use this one!)

Orange Bars

If you're a fan of lemon bars you might like to try making orange bars. They're zesty and sweet and the dark chocolate offers such an incredible flavor contrast.

Instructions 

  • Preheat oven to 350 degrees F and use parchment paper to line a 9-inch square baking pan, with enough to hang over the sides.

For the Crust:

  • Using a microplane, finely grate 2 tablespoons of orange zest.
  • Combine the flour, white and powdered sugars, and 1 tablespoon of orange zest in a large mixing bowl. Grate the extra cold butter into the flour with a cheese grater, and mix with your hands until a crumbly dough forms.
  • Press the dough into the prepared pan and bake until the crust is pale golden brown, approximately 30 minutes.

For the Curd:

  • While the crust is baking, begin to prepare the curd. Juice your oranges to yield 1 cup of juice.
  • Whisk the orange juice, eggs, sugar, cornstarch, flour, and orange zest in a saucepan over medium heat until they slowly simmer and thicken. Once the mixture boils for 30 seconds to 1 minute, it thickens sufficiently. Remove from heat and strain into a mixing bowl. Whisk in the butter.
  • Once the crust is ready, remove it from the oven and pour the orange curd onto it.
  • Return the pan to the oven and continue baking; rotate after 15 minutes until the curd is set or no depression remains after touching the center; this should take around 30 minutes.
  • Remove from the oven and cool to room temperature, then refrigerate until chilled through, at least 1 hour. Cut into bars and garnish with shaved chocolate (optional).
