This is a 9-ingredient slow cooker recipe and a lot of those ingredients are pantry staples and found at your local grocery store. Along with the fresh corned beef and russet potatoes, you will need pickling spice, onion, cheese, broth, hot sauce, Worcestershire sauce, and mushroom soup.
You might be curious about the pickling spice in this corned beef hash recipe. Although this ingredient is good for pickling vegetables and making fermented foods, it is more versatile than that. The combination of broken and whole seeds, spices and herbs really bring out the taste of crockpot cheesy corned beef and potatoes. There is no better way to cook corned beef hash than in the slow cooker.
There are different brands to choose from. If you don’t have any, you can sub a small pinch each of any of the following you happen to have: mustard seed, coriander seeds, allspice, red pepper, cinnamon, cloves, ginger, and a bay leaf.

Au gratin potatoes can be confused with scalloped potatoes because they look similar. Scalloped potatoes are made with a mix of milk and heavy cream, while potato au gratin uses shredded cheese between the potato layers.
You can leave the skin on the potatoes if you like or peel them. Both ways will taste delicious.

- 2 Pounds corned beef, cubed
- 2 Tablespoons pickling spice
- 2 Pounds russet potatoes, peeled and sliced thin
- 1 onion, yellow, sliced
- 6 Ounces pepper jack cheese, shredded
- 2/3 Cup vegetable broth
- 1 Tablespoon hot sauce
- 1 Tablespoon worcestershire
- 1 Can mushroom soup , creamy
Instructions
- Heat a frying pan over high heat.
- Cut corned beef into cubes. Season with pickling spices. Add to the hot pan and sear for 4 minutes.
- Peel and thinly slice the potatoes. Cut onion into thin slices.
- Alternate adding layers of potatoes, onions, corned beef, and cheese to the slow cooker.
- In a medium mixing bowl, combine vegetable broth, hot sauce, worcestershire, soup, and a pinch of salt and pepper. Whisk until smooth. Pour into the slow cooker.
- Cover and cook on low for 7 hours, or high for 4 hours.
